Peanut Butter Frosting

Ingredients (use vegan versions):

    1/2 cup natural peanut butter
    1/2 cup Earth Balance (margarine)
    2 cups icing sugar
    2 tablespoons soy milk

Directions:

Beat together all ingredients in a mixer until smooth.

Great served on a chocolate cake or cupcakes, for filling cookies, or just to eat when you’re feeling sorry for yourself.

**Due to the amount of icing sugar, its great if you can use natural peanut butter (with no sugar) so it balances out.**

Serves: frosts 1 cake or twelve cupcakes

Preparation time: 10 minutes

This is a peanut butter frosting to die for. I cheated on the cake and used "Bob's Red Mill" whole grain chocolate cake mix, which is vegan if you use the flaxseed meal for an egg substitute. The chocolate cake with the peanut butter frosting is a combination that cannot be beat. Thanks for giving us such a delicious recipe.

yes. it is finely ground sugar with some cornstarch in it. it isn't grainy at all. i looked online and it said it was  Smiley

I would put this peanut butter frosting on EVERYTHING - bananas, cookies, tomatoes, my fingers!  Grin

The only change is that I added a splash (1.5 tsp) of vanilla per the suggestion of Joy of Cooking.

i can't get vegan margarine here in the Carribean (seriously every single margarine here has fish oil in it, it's sick) so i used a little more than 1/4 cup coconut oil instead and 4 tablespoons of coconut milk instead of 2 tablespoons of soymilk.. it came out a little runny, but was super yummy and gooey..  Smiley

I ommitted the Milk, it really didn't need it. I used raw honey instead of sugar. It was sweet enough not too overwhelming.

this was pretty good!
i 1/2'ed the recipe and there was stiII pIenty for my 12 cupcakes (i used the Super moist chocoIate cake recipe from this site).
one thing for me was i tasted more margarine than i preferred, so next time i think i'II 1/2 the margarine and just add more peanut butter.
some of my sisters just Ioooove peanut butter and i know theyII adore this.

Sooo good.  I didn't add as much powdered sugar, but thought it was still awesome.  I'd even put it in my oatmeal!
