Stuffed Mushrooms

Ingredients (use vegan versions):

    20-30 white mushrooms (depending on size)
    1/2 teaspoon chopped garlic
    2 tablespoons margarine or vegan "butter"
    about 8 tablespoons soft vegan "cheese" (or cream cheese alternative)

Directions:

Remove all the stems from the mushrooms.  Set the caps aside.  Chop 3/4 of the stems as well as the garlic into very small pieces.  In a frying pan, melt the margarine (or "butter") then add the chopped stems and garlic.  Cook until the mushrooms are brown. (if you don't like garlic to be cooked too much, add to the mixture a bit later).

In a small bowl, mash the soft "cheese" substitute, then add the fried mixture.  Mix well.  Spoon the mixture into the mushroom caps, if you go a bit over, it's okay.  Just try to get some of the mixture into each cap.  There is usually enough of the mixture for each mushroom cap.  If you don't have enough, store the remaining caps in the fridge for another day.  Put mixture-side-up mushroom caps in a deep baking pan (as sometimes a lot of juice can form) and bake at 300 degrees F for about 20-30 minutes.

I like the mushrooms to be cooked well, so if you prefer them a little more firm, reduce the temperature or the time.  Sometimes the mixture browns a bit too much.  Keep an eye on them and if the mixture browns, throw some foil over the pan.  Cool about 5 minutes before eating or they'll burn your mouth off.

Makes: several servings, Preparation time: 10 minutes, Cooking time: 20-30 minutes

Okay, so these are so awesome! I sorta made my own filling to go in them but still followed the basic idea of the recipe, which is genius by the way. I mixed together the following for my filling: cream cheese, fresh chopped garlic, chopped mushroom, paprika, cayenne (lots!), Mexican chili powder, and lemon and pepper salt. Thank you so much for the idea!!! I absolutely loved these (as did others)!!!

I though these were pretty good... i did top the shrooms with cayenne pepper but i thought the filling was a little too rich and the mushrooms could have been firmer so maybe next time I won't cook them in the oven as long (which was mentioned) and add more cayenne. Thank u though i will try these again Smiley

OMGosh, I am soo thrilled with this, I had to write before the mushrooms are even cooked! I added garlic and artichokes, with a large pinch of nutritional yeast and it tastes like the most decadent and delicious dip ever! I ate three of them raw. Thank you so much for this delicious recipe!
