Spaghetti with Spring Onion and ZucchiniIngredients (use vegan versions): 200 g spaghetti, broken in half (about a small handful, or eyeball how much pasta you'd
like)
1 1/2 teaspoons olive oil
1/2 zucchini, chopped
2 spring onions, chopped or diced
1 clove garlic
Directions:Boil water and cook the spaghetti.
After about 10 minutes of cooking, heat the olive oil in a pan and toss in the zucchini and spring onion. Cook on medium-high heat.
Once the spaghetti is done, drain and mix with the veggies. Add salt and/or pepper to taste.
Delicious and quick for two people, when this is what you have in the house!
