Chique Pot Pie

Ingredients (use vegan versions):

    2 large carrots
    2 medium sized potatoes
    1 packet Smart Menu chicken style strips (or other chicken substitute)
    1/2 cup peas
    2 cups vegetable broth
    1 large onion
    5 cloves garlic
    1 tablespoon flour
    Spices: 1/2 teaspoon marjoram, 1/2 teaspoon cumin, 1 teaspoon basil, 1/4 teaspoon black
    pepper, 1/2 teaspoon salt (all spices to taste)
    Crust:
    3 cups flour
    2/3 cup cold water
    1 1/3 cup olive oil (or mix olive and canola)

Directions:

Bring vegetable broth to a boil in a medium sized sauce pan.

Chop carrots into tiny cubes and add to vegetable broth; meanwhile, peel and chop potatoes into tiny cubes, and add to the broth.  Add a little flour (about 1 tablespoon) to the broth and stir until dissolved.

Sauté the chopped onion and garlic in olive oil and spices until transparent.  Add onion mix to the potato/carrot broth, add in the peas, and let simmer for a long while (15 minute or so), till the vegetables are very soft and the broth is thickened.

Meanwhile, mix together the crust ingredients, and separate the dough in half (half for the bottom, half for the top).  Roll it out (between plastic wrap) or press with fingers into a circular casserole dish.

When the filling is finished thickening, stir in the Smart Menu chicken strips and pour the filling onto the crust-lined dish.  Add the rest of the pie crust on top.

Bake in the oven at 400*Fahrenheit for 30-40 minutes or until the crust is toasted golden.

Serves: 6

Preparation time: 1 hour

This pot pie is absolutely amazing!

It looked a bit weird when we (my house mates and I) were getting the ingredients mixed together, and I thought we had used too much oil.. but it turned out awesome when we cooked it!

Grats on the best pot pie recipe ever!

I've made this once before, and it is delicious. My boyfriend and I are making dinner in a couple weeks for our parents (eeek!) and I immediately thought pot pie, what with Fall coming. I want to make individual pot pies for each person, and this recipe is sooo good, I think I'll change the amounts a bit to work. Great recipe!

The crust on this pie was the easiest, flakiest, pastry I have ever made and I barely had to do anything! I only made enough for the top crust and it was plenty. It needed a touch of salt but was otherwise perfect! Thumbs Up I wasn't really crazy about the filling, but I would make this again with some changes. That said, I didn't have any potatoes and I used pearl onions instead of sauteed onion and garlic. I also had to make a roux with the flour and some oil because it kept clumping up when I added it straight to the broth. I used vegan chicken broth and homemade chicken (still a work in progress).

i made this last night for dinner and it was delicious!
i added some asparagus, celery, and half a can of Veg-All. I also added a bit more broth
it came out perfectly and was just like the pot pies i used to adore back in my non-veg days

This pie was super tasty!  Thumbs Up  I made it exactly as the recipe said too, except that I followed a previous posters advice on adding a little more broth and that was a mistake, I just ended up not using all of the liquid that was in the pot and it still turned out wonderfully! My meat eating husband was a big fan too!! The only other pot pie I made was my mom's old recipe sans chicken, so it was just tofu, frozen veggies, a store bought crust, and mushroom soup from a can... that one is still pretty good for how easy it is, but I don't think I can go back after this tasty version from scratch!
