Chocolate Cake

Ingredients (use vegan versions):

    1 1/2 cups flour
    1 cup sugar
    3 tablespoons cocoa
    1 teaspoon baking soda
    1 teaspoon vanilla
    2 teaspoons vinegar
    5 tablespoons vegetable oil
    1 cup raisin water (to make: boil about half a cup of raisins in water - or fruit tea can
    also be substituted)
    1 teaspoon cinnamon/mixed spice

Directions:

Pour dry ingredients straight into a baking dish (I don't do this though, I grease a dish thing and mix in a bowl).  Around 23 x 23cm (9x9in) is a perfect size.  Combine the ingredients with a spoon until mixed thoroughly.

Make three wells in the dry mixture - one large, and two smaller. Pour the oil into the large well, the vinegar in one of the smaller ones, and the vanilla in the other.

Pour the raisin water over the mixture. Mix all ingredients together, so you don't see any flour.  (then put in the cake dish).

Bake at 180 C / 350 F for half an hour.

If you want to ice the cake, I make up an icing of icing sugar and a little cocoa then mix with hot water.

I followed everything, except I subsituted 1/2 cup of flour for coconut (unsweetened I believe), and I forgot to add the spices since they were listed last after mixing the wet ingredients in. It was good. I think mine was done in about 26-27 minutes. I don't think I will try it with coconut again, but it was a nice attempt. The whole thing was gone within 18 hours (mind you, only two people ate it). Roll Eyes
