My Famous Chocolate Muffins

Ingredients (use vegan versions):

    2 cups white flour
    2 cup sugar
    2/3 cup cocoa
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 teaspoons vanilla essence
    1 tablespoon cider vinegar (but I use malt vinegar, so it's okay if you don't have cider
    vinegar)
    1/2 cup vegetable oil
    1 cup water
    1 teaspoon cinnamon/mixed spice

Directions:

Preheat oven to 190 cup (374 Fahrenheit). Grease the muffin tray (I use paper muffin cases though).

Combine flour, sugar, cocoa, baking soda, and salt in a mixing bowl.

Make a well in the center and add vanilla, vinegar, and oil, gradually stir in the water. Continue stirring until all the ingredients are combined, don't over mix.

Pour into muffin tray, bake for 20 minutes.

I just tried this recipe today. I didn't have white sugar (plus, I don't eat it) so I used brown sugar instead. I also didn't have vanilla, so I omited it. And I put the whole thing into one of those bundt cake pans. I baked it for 30 minutes.

It turned out wonderfully. The brown sugar and all spice I added to it were great with the chocolate. It was moist and delicious. Half of it disappeared before it even cooled! And the people who ate it aren't vegan like I am. They couldn't believe vegans can bake delicious things, lol.  Grin

Thanks for sharing. I give it 5 stars. Next time, I think I'll try it with soy milk rather than water. And I'll add vanilla.

These were FANTASTIC!!!  My whole family LOVED these--even my picky 7 year old, who normally ends up turning his nose up at the muffins I like.  He liked these, even though he doesn't like chocolate cake.  My daughter said they were the best muffins EVER. 
The only (tiny) changes I made were--I only had 1/4 cup oil left so I substituted unsweetened applesauce for the other 1/4 cup needed.  And I only  used 1 1/2 cups sugar.  They were moist and delicious!  I'm always worried that my muffins will turn out dense, but these weren't AT ALL!  I added a sugar/cinnamon mixture on top, before baking.
I will DEFINITELY make these again, and again, and again!!!!

I'm now only using 1 cup sugar with this recipe. And I continue to use 1/2 the oil and replace the other half with unsweetened applesauce.   My husband says that these are the best muffins I've ever made.

These are very good! I don't know which is better though..the batter or the muffins (some of the best batter I've tasted!). I'm never exact with my baking (somehow it works..), but I only used 1 c sugar, 1/2 c cocoa, 1/4 c oil, cinnamon, and a little more than 1/4 c applesauce. Because I over-dumped the applesauce..I only added about 3/4 c water. It was the perfect amount for 12 muffins, and I think 15 minutes was a good baking time (at about 370). I think these are very forgiving (I was sloppy this morning). : )

The only spice I used was cinnamon and I only put it on top of the muffins.  Before baking, I sprinkle a sugar/cinnamon mixture on top of the muffins.  And sometimes I put sprinkles on half of them (for the kids).

Thanks, yeah..I decided that just cinnamon would probably be good (I was just wondering, since it said "mixed spices"). I loved them. ; )

Smitten  I used pumpkin pie spice for the spice and I used 1/4 c peanut oil and 1/4 c veg oil (by accident, but it worked).  I also made these bad... by adding choc chips, peanut butter chips and mashmellows (just one in each).  I also made these mini cup cakes instead of big.  They were great!

By the way... make sure you note the proper temperature!! I got it wrong at first!! It turned out okay because I cooked them in a toaster oven instead of a big oven.  So they got done anyway.

Hope you enjoy them as much as I did!!

these turned out bad. 1st of all 1 cup of water is not hardly enough for 2 cups of flour, thats more of a dough consistency vs cake/muffin.  I had to cook longer than 20 minutes.  they came out still doughy in the middle and hard on top.  My 3 yr old liked them but theres 21 of them so I just threw them away.  I dont know if it was somethinf I did wrong, but I am a good vegan baker so who knows. But i do know I wont be trying this one again.

Pretty good.  2C sugar seemed excessive, so I cut it down to 1C (brown) and they were still plenty sweet.  Also cut back on the cocoa to 1/2C and used slightly less oil.  Added a few walnuts.  And I gotta agree that the batter was a treat in itself.  It made 12 decently-sized muffins, which were surprisingly light and fluffy.  They were done in 15 minutes and I immediately wolfed down three of them...

These were OK. I did make changes, though. I reduced the sugar to 1 cup and used sucanat. I also used whole wheat flour and coconut oil for the oil. I had to add an extra 1/2 cup of water because 1 cup was surely not enough. I also added a few teaspoons of cinnamon. These were good if you want something chocolaty but not too sweet.

I have to agree with Allychristine the batter was just a delicious as the muffins themselves. And this is a great low budget recipe. Definately one i will keep in my cookbooks.

These were delicious! The only change I made was using 1/2 cup of applesauce instead of the oil. Turned out perfectly. Mine made 12 nice sized muffins...and they have a perfect...I don't know whether to call it dense or spongie...texture. Very yummy.
