Insanely Good Spinach-Artichoke Dip

Ingredients (use vegan versions):

    3 tablespoons vegan butter
    4 tablespoons all-purpose flour
    2 cups plain soy milk
    3/4 teaspoon salt
    1/4 teaspoon black pepper
    pinch ground nutmeg
    touch of hot-pepper sauce
    3 cloves garlic
    2 14 oz. cans artichoke hearts, well drained
    1 10 oz. package frozen spinach, thawed and drained

Directions:

Melt vegan butter in a medium-sized saucepan. Whisk in flour; cook over medium heat for 1 minute.

Slowly whisk in soymilk.

Add salt, pepper, nutmeg, and hot-pepper sauce. Cook until mixture is very thick. Let cool, stirring occasionally.

Heat oven to 350 degrees Fahrenheit.

Pulse garlic, artichoke hearts, and spinach in a food processor until very smooth. Stir into cooled soymilk mixture.

Bake for 20-25 minutes.

OPTIONAL: Add 2 cups of your favorite soy cheese to the mixture when you combine the artichoke and soymilk mixtures, then sprinkle 3 tablespoons of it over the top before baking.

Preparation time:  30 minutes

This came out great. I especially liked that you didn't need fake cheese or anything to simulate the dip -- the soymilk and flour concoction worked fine. My girlfriend and I just had to force ourselves to put it away or we would've ate the whole thing despite being full. Thanks for the recipe.

This was really yummy... I used slightly less spinach than asked for because the dip was already really green with only 6-7 oz. of spinach.  I also made this in my slow cooker (on high for about an hour) because I didn't have access to an oven at the time.  I brought it for a potluck with fresh cut cauliflower, carrots, and broccoli and it was a hit!

Amazingly Delicious!!!!  i added a little less spinach and about a 1/4 cup of nutritional yeast to up the cheesy flavor and this was GREAT!  super easy/cheap and a party full of omnis devoured it with a toasted baguette.  I will make this again for every party i have!

This recipe was yummy!  I think next time I will leave some of the spinach and artichokes un-chopped for more texture.  Overall, it had a good flavor and I liked not having to use a ton of fake cheese products to create a tasty spinach/artie dip.

This was awesome. It was my first time eating/making spinach and artichoke dip. I loved it. I used rice milk instead of soy milk it turned out great Smiley

YUMMY!!! I added onions to the vegan butter and sauteed that first I also added garlic and sauteed that too before adding the flour. I also seasoned the spinach with garlic salt and added cayenne pepper. I topped the individual servings with salsa. Great recipe this settled my craving for Copeland's Spinach and Artichoke dip that has cheese in it.

I plan on buying some vegan sour cream to add to on top of the dip.

I decided to use the flour and soy mixture for my broccoli dip too.

THANKS for helping me veganize some of my favorite recipes!!! Thumbs Up

 Grin This spinach dip was AWESOME. I made it for the superbowl, and my boyfriend and I ate most of it by ourselves. I added about a 1/2 c of nutritional yeast with spices, and it was a great cheesy flavor and very healthy. TRY IT!

My daughter wrote the above review of this recipe.  She loves artichokes and spinach and she loved this recipe.  I left the spinach and artichokes a little chunky and it came out great.  A winner for our household for sure!  Thumbs Up

mmm! really good with toasted baguette! I used marinated artichoke hearts from a jar which gave it some extra flavors. Hot sauce definitely makes this whole thing work  Thumbs Up

This is wonderful! It tastes so great, and it just gets better with every bite.

I used the entire 10 oz of chopped spinach, and I just added a bunch of marinated artichokes from a huge jar of them that I had. I just pulsed it a few times in the food processor instead of blending it until it was smooth. Next time I will try it with more hot sauce and some vegan Parmesan if I have it on hand.

When it came out of the oven it was hot and I was hungry, so I plopped about a tablespoon of Vegan Gourmet sour cream in and mixed it. It cooled it to eating temperature and I had it on toasted baguette slices. Delicious! I also added a bit more salt to mine (kind of an accident) but it didn't turn out too salty. Even though I halved the recipe it still made a TON! If it's just for you and a couple friends, make half.
