Creamy Peanut Kale
Ingredients (use
vegan versions
):
1 bunch chopped kale
1/4 cup natural peanut butter
1 tablespoon vegetable oil (or spritz of non-stick spray)
2 tablespoons Bragg's Liquid Aminos
1/2 teaspoon coriander
1/4 teaspoon chili powder
1/4 teaspoon cumin
1/3 chopped onion
1 garlic clove
1/4 cup vegetable broth or water
Directions:
In a pan, heat vegetable oil. Fry garlic and onions, until translucent.
Meanwhile, in a bowl, mix peanut butter, Bragg's, broth/water, and spices until the peanut butter has dissolved, and it has turned saucy.
Add kale to the pan, and cook until the leaves are dark green and wilted.
Add the peanut butter sauce to the pan. If it is too dry, add broth/water to reach desired consistency.
Serves: 2
Preparation time: 10 minutes

Good recipe. Easily modified. I added carrots, red pepper, and tempe. Tasty and filling; it made a good lunch.

My tummy is SOOO happy! I made a little bit more of this recipe, which was good. I used much more garlic, substituted spicy peanut butter (available at
www.ilovepeanutbutter.com
), and added a bit of rice vinegar to the sauce. I used sesame oil to sautee. I ate this with baked tofu and brown rice, and served with Liquid Aminos and gomasio. YUM! I'm so glad I have more for lunch tomorrow. 5 stars!

We made this yesterday for lunch. It's absolutely delish! The kale and peanut sauce complement each other so well. We sprinkled sesame seeds all over it and added a bit of chili oil to the sauce. We also didn't follow the recipe completely but it
still
turned out great! An awesome and healthy way to eat your iron-laden veggies and get some protein while you're at it!

My boyfriend and I have made this mutiple times, with varying amounts of kale, varying ingredients (aka broth vs water, or not using all the spices) and it always turns out great! It's a staple in our house! We eat it over Korean sticky rice (kind of like how you eat japanese curry).
Just wanted to share my love for this recipe!

I changed this up and "made it my own" and it's great! I've made it twice now..and I can't get enough. I've used onions, red pepper, and carrot different times..and they are all great additions. I use more garlic, soy sauce instead of water, and mix it all in with linguine. Thanks for the idea! : )

Oh, I also use sesame oil to cook the vegs..and no liquid aminos..whatever that is..liquid amino acids?

Allychristine, Bragg Liquid Aminos has a soy sauce-like flavor and is used as a seasoning. Generally, you find it at health food stores. Thanks for sharing your review. I've had this in my box a while now and have been meaning to try it.

I love kale, and this is my favorite kale recipe so far. Really wonderful, creamy flavor. Despite that great creaminess, though, the kale is still definitely the most salient part of the dish, which I like. Will be making again.

a great flavor combination. i added broccoli and used cayenne pepper instead of chili powder and soy sauce instead of aminos (yeah yeah i know). also put it on top of a heap of fettuccine (the only pasta i have) but i think it'd be better on top of maybe some rice noodles or couscous. my sauce is really dry, probably because i let it sit in a covered pan extra-long while my pasta cooked. so either make a lot of sauce or plan your timing properly. i almost added brussel sprouts and tomatoes but forgot that i had them lying on the counter...may be better off without them. anyway, i used extra cumin and it is delicious. i imagine that the sauce would be too salty if you use Crappy Salty Peanut Butter, so go for the natural and salt-free.
