Stuffed Pepper Soup

Ingredients (use vegan versions):

    1 - 32oz vegetable broth (or use broth powder by the directions specified)
    1 green pepper - rough chopped
    1 yellow or red pepper - rough chopped
    1 small onion - diced
    1 garlic clove - minced
    1 - 14.5oz can of diced tomatoes (pureed in a food processor or blender)
    1/2 pack of Smart Ground meatless crumbles (I found them at Wal-Mart in the produce
    section)
    1/2 cup of brown minute rice

Directions:

Prepare all the veggies ahead of time.

Over low to mediam heat, sweat the onion and garlic until soft.

Add the peppers and cook until fork tender.

Add the tomatoes that you pureed, the meatless crumbles, the broth, and bring to a slow boil.

Once boiling add the rice, cover and cook until the rice is tender;  about 12 minutes.  Salt and Pepper to taste and enjoy!

Serves: 4 - 6 ?

Preparation time: 30 min

yum! adding more rice is a good idea. we used 3/4 cup and it was the perfect amount.

This recipe was really good.  The only change I made was to use a large can of crushed tomatoes instead of a regular can of diced tomatoes.  Very, very quick, easy, and delicious.  Next time I'm going to cook Gimme Lean soysage and adding it in place of the crumbles.  Thanks for the recipe!

Yummm. Normally I'm not a fan of tomato-based soups, but this sounded like such a great idea! I didn't use the meatless crumbles because I'm not a big fan of using faux meats, so I upped the rice to one cup instead. I also used a green and red pepper, but next time I'll try it with an orange one because I looove orange peppers. My omni boyfriend ate these leftovers up in the blink of an eye, while a bowl of eggy chinese soup that his mom (a certified chef) prepared went cold on the table. Muahahaha.

I also love that the veggies give all the flavor to this soup. He was shocked that the only things I added beside the veggie broth was salt and pepper. Smiley 5 stars! Next time I'll def. have some crusty bread on hand to sop up the yummies.

This soup was delicious.  I followed the recipe and it came out a little thick, but really yummy.  Next time I might add twice the tomatoes or twice the broth.  It makes a beautiful soup as well as being tasty. Cheesy

I have nothing but good things to say about this recipe.  It was easy to make, inexpensive and oh so tasty.  I did add some oregano and basil for a little more flavor but that's what I put in my stuffed peppers when I'm not making a soup.  Wink  I also added stewed tomatoes and broke them up with my hands because I like my tomatoes chunky.  My husband loved it and kept telling me that the soup kicks ass.  This will be a regular on my dinner options from now on.  Thank you!!!  Thumbs Up

AMAZING!!! I didn't have any minute rice, so I used about 3/4 to 1 cup of already cooked brown rice.

This is a really nice soup. In fact, my boyfriend, who loves hot sauce, said it was good enough to eat without hot sauce. I used bouillon cubes and it worked great. I didn't puree the diced tomatoes because we love tomatoes... it added another vegetable texture. The combo of red and green peppers (I hate orange and yellow peppers) was great. I also didn't need to season this recipe, which is great.
I'm adding this to my fav recipes!!!

I live in Bulgaria and couldn't find faux meat so instead, I added more rice. Turned out just great. My boyfriend and I are big fans of this recipe. Thanks a bunch!!!!

Delicious! I added one more thing just to zest things up. A teaspoon or so of italian seasoning just to give it a kick. Tastes amazing. I could eat this everyday!

I made this yesterday since both my boyfriend and I were coming down with something -- WOW. it was so good thay my non-veg mother said it was one of the best soups she has ever had, called it "beautiful", and after I left, sent me a text message saying "Awesome soup!!".  Grin I did throw in some herbs de provence and quite a bit of nutritional yeast half for flavour, half for the vitamins. SUCH A KEEPER.
