I'm looking for veg*n friendly South Beach Diet Recipes for my husband.
Quick before he 'turns'... the other day he suggested he eat a hard-boiled egg! Ack!

Mostly needed are vegan recipes, or 'allowed food lists' with vegan alternatives listed as well.
Or ANY veg*n low-carb resources... Huh

Any links or recipes would be GREATLY appreciated! Thanks everybody!  Smiley

Jeez!  I have absolutely no idea.  Does he have the recipe book?  If not maybae you can check one at the library, or browse one at the book store.

I would suggest a squash casserole with vegan cheese of course.  Is that allowed?

You could cut up squash, both yellow and green, saute in olive oil with a bit of onion and add the Italian flavored tomatoes and whatever sounds good and is allowed.  It makes a bit of soup.  Vegan tacos?  Do you think vegan "hamburger" has too many carbs?  After all it is made with soy.  I bet a lot of "our" food will have too many calories, that is, if you are going to make really tasty dishes.

If we had a bit more information as to what veggies or low carb options are allowed, maybe we could help more.  I do believe you have a tough situation on your hands!   Embarrassed

What phase of the diet is he in?  Can you use whole grain pastas?  (I use kamut and quinoa pastas all the time.)  I also think that seitan, tempeh, and tofu are pretty low in carbs.  For sauces, you could check out some of the no-sugar added products.  Sorry I'm not much help.   Undecided

The way I understand the South Beach diet is that it's not entirely low carb but more no bad carbs, i.e., refined flours, sugars and junk food.  I have a recipe book from the South Beach diet at home and I'll look at it and see if there's anythinig vegan in there and report back.

One of the Zone diet books is all vegetarian recipes, and I think many of them can be vegan.  I know it's not the same diet, but as I understand Zone is pretty carb-limiting also.  I think the book is called "The Vegetarian Zone."  I think that many of the recipes did call for processed vegan products like soy cheese and veggie burgers, though.  Still, it's probably worth a try--maybe your local library has it.

I don't have many specific recipes except lots of big green salads with a simmple oil and vinegar dressing. Once or twice a week I prep lots of fresh vegies and fruits and add different ones to mix it up throughout the week. I also add cooked beans but i'm not sure how this works on southbeach. I think tomaties and carrots are restricted too (that's why i hate these diets).

Also you might look for raw recipies as long as they don't  have too much sugar they naturaly stay away from proccesed flour and such things.

Good luck

I did SBD for a while-- I ate a lot of beans, lentils, tofu, etc. I typically don't eat a lot of meat-a-likes, but they were nice for at least Phase I. I knew there were certain things that are not allowed on Phase I, but as a veg*n, you have to take it with a grain of salt. I never limited tomatoes or onions, or beans. I did limit carrots in Phases I and II (they're supposed to be forbidden in Phase I and limited in Phase II), but I ate as many beans and lentils as I wanted.

Have him make vegan jell0 with agar agar and sugar-free k00l aid-- you need something sweet every once in a while, and there are practically NO vegan sf option. There's a recipe floating around for black bean brownies-- you can do this with egg replacer.

Drop me an email if you've got other questions. I lost maybe 15 pounds total on SBD. I don't follow it strictly any more, but I try to follow the philosophies-- only whole grains, no refined sugars, limited fruit, tons of vegetables, balanced meals, and small snacks throughout the day to keep your blood sugar level.

I don't know anything about the SBD, but I would suggest going over to fatfreevegan.com  There are a ton of recipes on that site.  You may find some that are compatible there.

I found this on the web:

http://groups.msn.com/SouthBeachDiet/p1vegetarian.msnw

Have you tried recipezaar.com? You can search by dietary needs, cuisine, occasion, ingredient, etc.

I think a most of those commercial fake meats are SBD friendly (I've seen the logos). Can't remember what phase, though.

OK, as promised I looked at my South Beach Diet book.  It's "The South Beach Diets Good Fats Good Carbs Guide, the complete and easy reference for all your favorite foods" by Arthur Agatston, M. D.  On page 1, it says, "The South Beach Diet can't be classified as a low-carb diet, a low-fat diet, or a high-protein diet.  Its rules:  Consume the right carbs and the right fats and lean to snack strategically.  In the food listings, the items are categorized as "Good", "Limit" and "Avoid".

Under Meat Substitutes, Black bean burgers, Hot dog, Tofu pup, frozen, Seitan, Tempeh Soy burger, Veggie burger, Fakin' Bacon tempeh strings, Five Grain tempeh, Original, plain tempeh, Wild rice tempeh, and all varieties of tofu are listed as being "Good".

Under Grains, Amaranth, Millet, Brown, quick cooking rice, Jasmine rice and all the white rices are listed as "Avoid".  Pearled barley, Kasha, Bulgur, Oats, whole kernel, Rye, whole kernel, Wheat, whole kernel, Regular brown rice and Wild rice as listed as "Good".  Corn meal, Corn grits, Couscous and Basmati rice are listed as "Limited."

Under Beans, the only things "Limited" or "Avoid" are the ones prepared with added sugars or bad fats, i.e., animal fats and sometimes corn oil.

Under Nut Butters, all are listed as "Good".

Under Vegetables, only potatoes (except new potatoes) are listed as "Avoid".  Sweet corn, parsnips, pumpkin and rutabaga are listed as "Very Limited".  Beets, fava beans, green peas and new, whole potatoes are listed as "Limited".

I hope this helps.  I think that he can eat most of the "normal" vegan dishes without a problem.  I'd suggest that you pick up a copy of the little handbook and work from there for other things.  Moderation in all things is the key to weight loss, I think

Thank you so much everyone!! This has really really helped! And thanks a ton TinTexas for that list of foods from your diet book (I'm gonna have to go get that book) I actually order 2 of Joel Furhman's books before I checked out replies to this. So I hope they get here soon!

Sharway, we also have not limited tomatoes, onions, or beans. Smiley We'd be eating air! I'm glad to hear that it worked for you! That keeps me hopeful!
I'm gonna try those black bean brownies if we can... he's been missing his fruits (sweet stuff) Smiley
I'm just doing it to support him.... so I cheat when he's not in the house...  Roll Eyes

One more week of phase I...
Unfortunately for the most part we do stick to 'good' carbs in our regular lifestyle, and my husband is super active, so we've had to take somewhat drastic measures for him to lose more weight. He was successful on the SBD before he became vegan... I'm really hoping he'll get the same positive results this time around to reinforce the wonderfulness of being vegan in his mind!
