Cucumber SaladIngredients (use vegan versions): 2 English cucumbers (the kind that are longer & usually come wrapped in plastic)
1 bunch mint leaves
2 serrano chiles (or you can use jalapeņos)
1-2 tablespoons sugar (to taste)
enough rice vinegar to coat salad
Directions:Slice the cucumbers into very thin circles (you can also peel it if you prefer) and put into a bowl. Tear the mint leaves and add to bowl. Slice the pepper and add as well. (I keep the seeds but omit them if you don't like it too spicy). Sprinkle the sugar and cover with vinegar. toss and let sit for about 30 min. Using red peppers makes for a nice contrast with the green mint leaves and cucumber.
