Baked French Toast

Ingredients (use vegan versions):

    4 slices bread (I like whole wheat)
    1 1/2 cups soy milk
    dash of nutmeg
    1/2 teaspoon of cinnamon
    3-4 tablespoons of flour
    2 teaspoons of sugar
    4 ounces vegan cream cheese (Tofutti, etc.)
    1 1/2 tablespoons of sugar
    1/4 cup of pecans
    fresh fruit or canned fruit pie filling (optional)
    powdered sugar (optional)

Directions:

Blend vegan cream cheese and 1 1/2 tablespoons of sugar.

Mix flour, cinnamon, nutmeg, soy milk, and 2 teaspoons of sugar to form a batter.

Dip slices of bread in mixture, until you have a good amount of batter "saturated" into each slice.

Line bottom of casserole dish with two slices of the bread.

Spread cream cheese mixture over bread.

If you like, sprinkle pecans over that.

Top with remaining two slices of bread.

Bake at 350 degrees until bread is puffed and golden, and cream cheese mixture is bubbly, but not brown.

Top with fresh fruit and/or fruit pie filling and sprinkle with powdered sugar (optional).

I made this recipe last month and actually took some pics of it, just forgot to come back and show them. Thought id add them this month when i saw the recipe again.
The first is the plain, and the second one is with some homemade plum jam on top.

It was Great!
