Date Coconut Balls
Ingredients (use
vegan versions
):
2 cups dates, pitted and chopped
1/3 cup water
1/2 cup unsweetened coconut flakes
Directions:
Bring the dates and water to boil in a saucepan. Cook for about 10 minutes, stirring occasionally to mash the dates.
When the dates are completely mashed and the water absorbed, remove from heat and allow to cool a bit.
Scoop out heaping teaspoons of date mixture and form balls or logs and roll in coconut.
Store in fridge.
Serves: 24 balls
Preparation time: 15 minutes or so

Excellent treat! Especially for the summer, because of the tropical coconut taste.
We did some additions and
revisions
, which made it excellent:
Used two packs of pitted dates. Chopped them up in small pieces.
Then added them to a small saucepan with a little over 1/3 cup water. You may have to add more water, just to make sure the dates don't burn. Cooked on high to med high, then lowered the heat if desired. Cooked for 5 min, stirring constantly.
Zested half of a lemon (not sure how much) and added it to date mixture in the end.
Lemon
adds a great touch!
Once cooled, rolled in coconut and placed on wax paper or foil. An even tastier alternative - spread a little date mixture onto a
graham cracker
(use whole wheat MirDel) and topped with coconut!
Made 15-20.
Very easy and cheap!
Could serve little balls or graham cracker bars at parties for finger desserts!
Could roll in nuts instead of coconut also!

Ditto the "Simple, but so yummy!" review. My revision was just to stick a whole almond in the middle of the date roll (with just a little still sticking out). Adds a nice crunch and reminds me of Almond Joy candy bars sans chocolate. This may become a regular for us.

so good! i used crushed coconut and added raisins and chopped nuts, to make a perfectly vegan, gluten free dessert. tres bein!

oh these were so good - I added sultanas and almond pieces... the were just so easy as well - and way too yummy... I was making them for a party tonight but they were all gone within the hour... oh well - I will just have to start again.

mmmm - I made these again but I added some LSA (ground Linseed, sunflower seeds and almonds) to the mix to firm the bals up. All my friends loved them.

Oh these were so good! I tried a few variations just to see what we all liked. I added cinnamon to one, cocoa powder to another, some crushed almonds to another, rolled some in coconut and so one...
Bookmama-adding some cocoa powder with crushed almonds and rolling them in coconut gave them the chocolatey flavor for the almond joy taste! I hated almond joys as a kid, but I loved these! So did my kids!
This will definitely make an appearance again and it will be a great desert to take to gatherings that no one would guess is "wacky vegan food"!

These tasted bland to me, so I tried them a second time subbing apple juice for the water. Nope - I still couldn't get them to taste like anything besides dates . . . I mean, dates are delicious! but I wouldn't go to the trouble of dicing Mejouls and double-boiling them in order to get them to taste the same, but with a weird texture. Did other people get the taste to really pop?
