Benz Zucchini Bread

Ingredients (use vegan versions):

    2 under ripe (between green and yellow) bananas*
    2 cups sugar
    1 cup vegetable oil
    2 teaspoons vanilla
    -------
    3 1/2 cups white flour
    1 1/2 teaspoons baking soda
    3/4 teaspoon baking powder
    1 1/2 teaspoon salt
    2 to 3 teaspoons cinnamon
    -------
    2 -3 cups grated unpeeled zucchini, a couple large zucchini should be good
    1 cup walnuts (optional)
    1 cup raisins or dates (optional)

Directions:

Makes 2 loaves – eat one and give one to a friend.

Preheat oven to 350 Fahrenheit.

Liquefy bananas in the food processor.  Combine bananas, sugar, oil and vanilla in a large bowl.

Combine dry ingredients and add to banana mixture.

Add zucchini and any optional ingredients.

Pour into 2 bread loaf pans and put in the oven for 50-60 minutes.

- Important –
 When the bread cools, take it out of the loaf pans and wrap them tightly in saran wrap.  This seals in the moisture and keeps the bread soft and doughy.

*Bananas should be on the green side, very firm.  This way, you won’t really taste the bananas, which are here to act as eggs.  If the bananas are too ripe, you’ll have banana-zucchini bread and that ain’t what we’re trying to make.

Serves: 24

Preparation time: 25 minutes

This recipe was great for a snack with tea! I loved using banana instead of egg, and I chose to make muffins instead. Plus added some almonds! 
Quick and tasty, a family favorite already. I've had to bake several batches since the first went so fast with friends and fam.
I might have to try the baby loaf size next.

This sounds great! Does using greener bananas really help with the overpowering banana-taste?? How great! I always used over-ripe bananas because they are easier to mush-up. My food processor is broken, though - any suggestions for mashing up the bananas to the right consistency? It sounds like it would be more difficult to mash up under-ripe bananas by hand..

This is such a great recipe!! I used boysenberries and walnuts in addition to zucchini and everything else. For the oil, I used half olive and half almond..not sure if that made a difference...I also chose to use ripe bananas to get a more complex taste. So good for breakfast and it stayed really moist which is a big plus! Thank you!

I always use my food processor - but it might work by hand... could give your arms a bit of a workout though.  It doesn't come back to haunt me if the banana is a little chunky after processing.  I'm glad you guys liked it!

I only used half the sugar that the recipe called for (and subbed brown sugar for white) and these were still pretty sweet for me. THat might have been because i also subbed all the oil for applesauce. Good recipe though, it was super easy. and just added way more zucchini to my second batch of muffins to compensate for the sweetness.

I am not happy with this recipe at all. I followed it exactly & the batter was extremely dry. Too dry to mix, so I added 1 cup of applesauce & a little extra shredded Zucchini, which seemed to help. If it wasn't for the walnuts, this bread would have no taste at all. Sorry, I just don't like it.

Now this was insanely delicious.  Halved the recipe and came out with a dozen muffins. I used all brown sugar and 1/2 wheat flour.  Mashed the banana by hand, which wasn't a lot of fun, but worked out just fine.  Used about two cups of zucchini and added walnuts and figs. 

They were too good!  I ate four or five the first night (heh...oops).  Very moist and sweet...

This was so yummy!  I've made this three times and everyone goes nuts over it.  I have been adding raisins or frozen blueberries.  Both are delicious.  I also like adding older bananas to give the taste more depth.  Everyone who has tasted this bread asks me to make more.  My husband even asked me to make one just for him.  I highly recommend this recipe.   Thumbs Up Thumbs Up Thumbs Up

This was fun and easy to make.  I subbed turbinado for sugar, used pumpkin pie spice vs. cinnamon, and added almonds.  Crazy delicious, couldn't wait to share them with everybody.  Thanks!

Thumbs Up  Super yummy!!
The breads turned out so well, I'm going to share some ... and then make some more!!



My bread loaves came out beautifully, and now my entire appartment smells delicious!
Mid-way through the baking, I noticed one of my hamsters woke up and started sniffing around her bin hamster
... this bread smells so awesome!  Smitten




I followed the recipe almost exactly...


My few deviations/additions:

-- I used ripe bananas, but the 'naner flavour is so slight, I can barely notice it
-- I added a dash of nutmeg

I didn't add raisins/dates, but, I did use a cup of walnuts (which I put into the processor and finely chopped.)
Because I like a lot of zucchini in my zucchini bread, I used 3 cups.


The loaves burned just a tad, on the bottoms, but, I think this is just because of my baking moulds, and not the fault of the recipe, since it happens almost everytime I use them. ( I used 2 silicone bread loaf moulds.)

I just made this recipe this evening for the first time and it is sooooooo goooooooood!! The whole house smells wonderful and it tasted excellent. I did add walnuts but left the rest of the recipe the same. I will make this again for sure! Thumbs Up

I made this for a family picnic & got LOTS of compliments.  Everyone really loved it, & I loved it too Smiley.  I didn't make any changes to the recipe.  There is no need to - it's perfect!  BTW - I used 3 cups of shredded zucchini.
