Cinnamon Rolls

Ingredients (use vegan versions):

    For the Dough:
    1 cup warm soy milk
    1 package or 2 1/4 teaspoons active dry yeast
    1/2 cup organic granulated sugar
    1/3 cup melted butter substitute (Earth Balance is good)
    egg substitute to equal 2 eggs
    4 cups all-purpose flour
    1 teaspoon salt
    For the Filling:
    1 cup brown sugar
    2 1/4 tablespoon cinnamon
    butter substitute to help the filling stick

Directions:

This is a recipe my family has me make on any special occasion. On Easter, Christmas, Birthdays, when they really want them, etc. This cinnamon roll recipe really is one of the best, if not the best recipe I have.

Place the yeast, a pinch of the sugar, and the warm soymilk in a large mixing bowl (I use a Kitchenaid). Let sit for 5 minutes or until foamy. Add the melted butter substitute, granulated sugar, egg substitute, half the flour, and lastly the salt. Stir on low with the paddles attachment on until the ingredients are incorporated, about a minute. Add the rest of the flour in two intervals. Knead it for about 3 minutes until it's soft and pliable.  let rise for 1 hour.

While the dough is rising, mix the brown sugar and cinnamon together in a bowl.

Once the dough has risen, flour a clean surface as needed and roll the dough out into a rectangle about 16"x21". The dough should be about 1/4-1/8 inches deep. Spread on the butter substitute on the top side to coat, sprinkle on the brown sugar/cinnamon mix to coat. Roll it up width wise, cut into 12 equal lengths and place them into two cake pans and bake at 400 degrees for about 10 minutes or more. They should be slightly soft when you take them out.

Serves: 12

Preparation time: about 2 hours

i had a hard time with these the first time i made them, they didnt rise at all!

but im going to try them again cause even without rising, they were delicious.... and it might have been my yeast... who knows?!?

These are perfect and very easy to make.  My mixer is kind of broken, so I stirred the dough by hand and had no problems with it.  I made them for my son's birthday today and everyone is gobbling them up.  Because he's got a voracious sweet tooth, I made a simple glaze to drizzle on top, but they would have been plenty sweet without it.  I had to bake for 18 minutes to get them a little brown on top, and they were perfectly baked inside when I took them out.

Oh WOW!  These are sooooo yummy!  I've made cinnamon rolls from other recipes and was always disappointed.  These are so easy and so good!

I made a simple glaze to put on them, but they don't necessarily need it.

Fantastic recipe! Just tried these out and will definitely be saving this recipe. Smiley

When adding the flour, reserve some and only add as much as necessary for a good dough consistency. I actually used only a little over 3 1/2 cups and used a bit more when I rolled the dough out for shaping. All depends on how humid it is where you are.

Cinnamon rolls freeze wonderfully too. After rolling/cutting, place on parchment on a baking sheet and place in the freezer. Allow to freeze solid, then place in a ziploc or vacuum bag and you'll have fresh, hot cinnamon rolls whenever you want! Just allow (however many you want to bake) to thaw and rise and pop them in the oven. You can even put them in a parchment lined (or greased) pan and cover with plastic wrap (sprayed with cooking spray) and put in the fridge overnight to thaw/slow rise. Smiley Works great for smaller households.

i grew up eating cinamon rolls for special occasions too!  this is a great recipe.  too make them sweeter, a simple glaze can be made by stirring powdered sugar and soy milk together and drizzling it on top of the rolls (after they've cooled a bit, otherwise it'll melt and run off).

Wanted to add - cutting cinnamon (or other rolls) is made simple with a piece of dental floss. Simply slide it under the roll and bring the ends up to cross at the top and pull. Much easier than trying to cut with a knife and won't smash the roll either.  Smiley

This is my first review here, ever!  Anyway, I made this with whole wheat flour instead of all purpose.  I also used coconut oil instead of any butter substitute, simply because I didn't have any at home.  I also made mine all miniature, so they were just slightly bigger than bite size.

Thank you for an excellent recipe.

Also, the dental floss thing really works!

These are SO cinnamon-y!  I made them this morning and came home to a half empty pan! (Admittedly, I ate two for breakfast.)  I only made two changes.  I used ww pastry flour and baked them for about 25 minutes- partially because my oven is a little wonky.  I will definitely make these again!

These were very tasty, but I messed them up. First, I made them last night so that they would be ready for breakfast this morning. The first mistake I made was using whole wheat flour instead of whole wheat pastry flour (I thought the flour seemed very course, but it was late and I was slow). Then, I didn't understand what a paddle attachment was. So, I used this attachment that didn't do much. The end result was that the buns didn't rise. My husband said he would make them next time since he IS the bread maker in the house. They ended up being very yummy, my kids loved them. They reminded me of those  pecan rolls you can buy (little debbie?) without the pecans.

 :)Wow these were fantastic. Better than I remember Cinnabon. I used the cream cheese frosting from the incredible carrot cake recipe and made these melt in your mouth. YUMMY!!!!
