My Super Duper Moist Banana Bread

Ingredients (use vegan versions):

    2 1/2 cups whole wheat flour/bread flour
    1/2 cup oat flour
    6-8 bananas, pureed
    2 cups pure maple syrup (brown rice or agave works too)
    1/2 cup turbinado sugar
    1/2 teaspoon vanilla
    1/2 cup almond milk (or soy, oat, nut, etc.)
    1 1/2 tablespoons egg substitute powder (do not pre mix)
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 cup of any of the following: pecans, dates, raisins, chocolate chips, walnuts, etc.
    1/4 cup oil

Directions:

Preheat oven to 350.  Lightly oil or line 2 loaf pans with foil.  You will need two bowls.

Bowl #1, combine dry ingredients and blend thoroughly.

Bowl #2. combine all wet ingredients and blend with a mixer to remove any lumps.

Combine wet/dry ingredients until "just mixed"; the batter will be slightly lumpy.

Add any optional goodies to batter and fold in.

Pour into 2 loaf pans and bake for 45 minutes or longer until toothpick inserted into the center comes out clean.

So easy.

Serves: 2 loaves

Preparation time: 20 minutes

Wow, it came out very well. Execpt I didn't follow this recipe very closely. I couldn't find any turbinado sugar so I used regular sugar and I used white flour because I couldn't find any oat flour at the store. Still, it was very moist and very good. I also used half the ingreedients because I only wanted one loaf. I would have taken a picture and posted it here but we ate it too quickly.  Smiley

I didn't have a loaf tin, so I made it into muffins! I didn't change anything, except that I baked them for around half an hour instead of the full 45 mins. They were crispy on the outside and deliciously moist inside. This recipe makes a huge number of muffins - at least 30. A huge hit with my family and friends!
