Tofurky-Jack Panini

Ingredients (use vegan versions):

    4 thin slices vegan gourmet Monterey Jack cheese
    3 slices Tofurky (deli slices), any flavor
    2 slices whole grain bread
    Earth Balance margarine

Directions:

Heat a sauté pan over slightly medium-high, and put in a small pat of Earth Balance.  When it sizzles, put in the two slices of bread.   When the bread is browned, flip each slice over.

Add the cheese and Tofurky slices on one piece.  Place the other piece of bread (browned side down) over the cheese & Tofurky.  Press the sandwich down with a plate or something heavy.

Once browned, flip it over and repeat with the other side.  You can finish it off under the broiler if the cheese isn’t melted enough, or just use a Panini press. You can add pretty much anything, like spicy mustard or some vegan mayo - be creative!  Wonderful with some tomato soup!!

I bought a new panini grill, and this was the first sandwich that I made.  So delicious!  For the bread, I used a hatch chili bread that I picked up from Trader Joe's, which added some great, spicy flavor.  I just spread one side of each slice of bread with Earth Balance margarine, and used no additional margarine on the grill.  The FYH vegan cheese got nice and gooey and bubbly.  If the cheese doesn't seem to be melting, just leave it on the grill a little longer.  My panini came out perfectly toasted and crunchy.  I'll definitely be making this simple, tasty panini again in the near future.
