Chipotle Hummus

Ingredients (use vegan versions):

    1 can chickpeas
    2-4 chipotle peppers in Adobo, diced
    1 tablespoon adobo sauce (use what the chipotles are packed in)
    1/4 teaspoon ground cumin
    1 clove garlic, finely diced
    1 small or ½ medium onion, diced
    1 tablespoons oil for sautéing
    pinch of salt
    hot sauce (optional)
    fresh cilantro (optional)

Directions:

You can make this rustic style, mashing the chickpeas by hand with a potato masher, or you can put everything in the food processor if you want a more creamy texture.

Rustic Style:
 Heat the oil over medium-low heat.  Add the onions along with a pinch of salt, sauté until translucent.  Then add the garlic and another pinch of salt, and continue sautéing until the onions start to caramelize. Meanwhile, drain and rinse chickpeas.  Place in medium size bowl and mash with a potato masher.  Then add the chipotle peppers, adobo, cumin, and sautéed onions and garlic.  Continue mashing until the mixture is creamy, and resembles hummus.  You may need to add more adobo to achieve a creamy texture. To finish, tear in the fresh cilantro.

Creamy Style:  Heat the oil over medium-low heat.  Add the onions along with a pinch of salt, sauté until translucent.  Then add the garlic and another pinch of salt, and continue sautéing until the onions start to caramelize. Meanwhile, drain and rinse chickpeas.  Place all ingredients in a food processor, and process until smooth.  You may need to add more adobo to achieve a creamy texture.  Remove from processor, and tear in the fresh cilantro.

Garnish with a sprig of cilantro and a few sprinkles of hot sauce, and serve with tortilla or pita chips.  Enjoy!

I reserved the drained chick pea liquid to put in the blender as needed. 

This is very good and not too spicy (I didn't add tabasco)!!!

This looks and sounds great, but is there any other pepper that anyone would recommend if you can't get chipotle peppers?  (here in the netherlands)
Are they spicy, mild, or what?  I haven't ever really heard of them.
And if using other peppers, what can stand in for the adobo?
Any help or advice appreciated!
