Super Sauteed Kale

Ingredients (use vegan versions):

    1 pound kale, washed, tough stem cut off, leaves cut into 1 inch strips
    1 small onion, cut lengthwise, then thinly cut crosswise
    1 garlic clove, diced
    2 carrots, sliced thin with a vegetable peeler
    1 teaspoon crushed red pepper flakes (more if you like it spicy)
    1/4 cup sliced almonds
    1 tablespoon toasted sesame seeds

Directions:

Heat olive oil in large pan, add onion, red pepper flakes and garlic, stir for 2 minutes.

Add half of the kale, stir for 1 minute, then add the rest of the kale.  After 6 minutes, add the shredded carrots and cook 2-4 more minutes, until kale is tender.

Toss in almonds and sesame seeds.

Serves: 2-4

Preparation time: 15 minutes

I only gave this 4 stars instead of 5 because there wasn't any salt. I added about a tablespoon of soysauce. I also added a little bit of water to the pan while cooking the kale and put a lid on. I skipped the almonds because I don't like them. But loved the sesame seeds!
This is my first time making kale and I love it! I bought a crinkly looking kind with reddish tint that was advertised as having "mild flavor."
If anyone is interested, I served this on top of the rice from the "Kale & Brown Rice with Kick!" on this site, which went really well together.

This was pretty super!  I thought about adding lemon juice (because I love kale-lemon together), but I didn't.  I love the addition of the carrot and almond.  Next time, I might add almonds before the kale to toast them, and I would add a little water and cover to steam the kale.  I'm adding kale to my grocery list so I can make this again next week!

Delicious!  Instead of toasted sesame seeds I used tahini paste which added a nice texture.  Sauteed the garlic in the tahini with a little vegetable oil.  Then added the carrots and kale.  Added lemon juice and soy sauce with ground ginger and cayenne.  Almonds and raisins at the end.

Really quick recipe and super good!!!
