Just Like Granny B's Sugar Cookies

Ingredients (use vegan versions):

    3 tablespoons extra firm silken tofu (MoriNu), mashed with a fork or pureed with
    blender/processor
    1/2 cup (one stick) margarine
    1 teaspoon vanilla
    1/2 cup sugar
    1 and 1/4 cup flour
    1 teaspoon baking powder
    1/4 teaspoon salt

Directions:

Cream margarine and sugar for about 5 minutes until fluffy.

Add mashed tofu and vanilla. Mix well.

Sift the flour, baking powder and salt into the mixture.

You can either roll out the dough and use cookie cutters or make cookie dough balls and flatten the dough with your hand onto an ungreased cookie sheet.  You want the dough to be almost the thickness you want your cookie because these don't rise much.

Bake for around 10 minutes in 350 degree oven.

Side notes: You might need to adjust the flour a bit if the dough feels too wet.  And these cookies aren't super sweet. If you like them that way, or if you aren't frosting them, you might want to add 2 more tablespoons sugar. These are really unhealthy, but super yummy and soft.

I just made these cookies for about 100 people who are used to eating vegan baked goods, and they were all amazed by their deliciousness. So was I. The dough was especially tasty. I made them exactly according to the recipe only I added a few tablespoons of orange zest, which I think made them especially good. I rolled the dough out and cut it into heart shapes, and it was a lot easier to work with than other vegan sugar cookies doughs I've tried, but still a bit crumbly. I frosted some with a nice thick vegan frosting and the rest I spread with raspberry jam. I'm really really happy with this recipe. It's my new sugar cookie recipe.

The note says these cookies aren't good for you.  It's true they are cookies after all, but these cookies are still better for you than non-vegan sugar cookie recipes.  The tofu adds protein, vegan non-hydrogenated margarine is healthier than animal fat, and if you use whole wheat all purpose flour or a mix of whole/white flour you will have a cookie that gives you some protein, fiber, and no guilt about using animal products.  A  Vegan diet is still an healthy alternative.  Even when baking sugar cookies!  Wink

These cookies were awesome!  I made these for my boyfriend for valentine's day, since we both used to love Granny B and her preservative-laden cookies.  I frosted them with a really thick pink "buttercream" to make them extra delicious.  They were  soft, chewy, and amazing.

Perfect! My bf wanted a quick cookie fix and I had all the ingredients.  They feel light and with the right firmness with a slight buttery flavor.  Yum!

one of the very few things that do suck about finland is that you can't buy vegan margarine here =( is it possible to make these without it and maybe replace it with oil?

Jenny,

I veganized this recipe from one that used oil. I tried using oil the first few times, but the cookies turned out very bad. Changing to margarine was what finally did the trick.

I wish you luck in either finding a recipe you can use or the vegan margarine Smiley

I don't actually remember, but I probably just multiplied the recipe by 8. that's what I usually do.

Amazing! I think I'm cured of any desire for processed sugar cookies now...I find the level of sugar in these just fine.

I used a little over 1.5 cups of flour (and also used whole wheat) and added 4 oz of applesauce instead of the tofu and they turned out fine. I was hoping to try it with oil next time, but it looks like other people haven't had much luck.

And pshh for unhealthy - if the rest of your food is sugar and fat free and super healthy, these are a very useful way to get your needed fats for the day  Wink

I used this recipe for a gift that I am giving someone at work.  I was given a ton of fresh lavender, which I dried and then removed the buds.  With that I made lavender vanilla sugar (by adding 1 TBSP dried lavender into a food processor with 1 cup sugar and blending until incorporated.  I thn stored it in jars with a vanilla bean pod) and they turned out great.  I put soymilk on the tops and added more lavender sugar for additional sweetness.  Great basic recipe to modify as needed.

The cookies turned out fluffy and soft.  Loved them.  I will be making this recipe for myself in the future.

I did add more flour, probly 1/4 C.  and 3 or 4 tbsp of organic sugar (most ingredients were)  and also cinnamon  & ground ginger. they turned out very brown, but still fluffy. i rolled half of them in cinn/sugar mix, they were excellent!

ps i did all creaming by hand, the tofu had just little specks left, but they looked kinda cool for texture or something.
