Cranberry-Apple Crisp

Ingredients (use vegan versions):

    3 Granny Smith apples, cored and cut into 1-inch pieces (no need to peel)
    2 cups whole fresh cranberries, or less, to taste (I used about 1 1/2c)
    3/4 cup white sugar
    1 1/2 cup old-fashioned oats (not quick cook)
    1/2 cup packed brown sugar
    1/3 cup flour
    1/2 cup (1 stick) vegan butter, melted

Directions:

Heat oven to 350 degrees, and spray a large (2 quart) baking dish liberally with cooking spray.

In a large bowl, mix the apples, cranberries, and white sugar. Spoon into the prepared baking dish.

You can use the same bowl to now mix the oats, brown sugar, and flour. Stir in the melted butter.

Sprinkle the oatmeal mixture evenly over the top of the cranberries and apples.  Bake at 350 for about 45 minutes until bubbly and the apples are tender.

This is great hot or cold, with nuts or without, with some vegan ice cream or without. It tastes kind of like a pie but is healthier than a pie, even good for breakfast.

If cranberries aren't in season, you could use whatever fruit you want-- I think I saw a recipe on this site for a strawberry-mango crisp actually...  anything would work!

I forgot to mention in the recipe that right out of the oven the cranberries might seem a little tart, but after a few hours (or overnight) the tartness really mellows out/gets sweeter.

I made this recipe today for my daddy who loves apple pie but can't eat it anymore because of all the shortening in the crust.  It was absolutely fantastic.  Nice and tart, just the way he likes it.  The only thing I did different was add a bit of cinnamon to the apples and cranberries.  I will definietly make this one again and again.

Yum, yum, yum!
I love this recipe, it turned out perfect.  I was worried it would be too runny but it firmed up nicely as it cooled.

So yummy! I used two Honeycrisp apples and one Sweet Tango apple. I added some cinnamon to the crumb topping before sprinkling it on top of the fruit. I ate mine with a scoop of soy vanilla ice cream and I'm trying to talk myself out of seconds!
