Chickpea Salad

Ingredients (use vegan versions):

    cooked or canned chickpeas--drained and rinsed if canned
    chopped tomatoes
    chopped garlic
    chopped red onion
    chopped hot pepper (optional)
    lime juice
    olive oil (optional)
    chopped avocado
    salt
    pepper

Directions:

Dump it all in a bowl, mix, and eat.

This is seriously the best.

Sorry I don't have quantities for the ingredients, but it works however you do it.

Serves: depends

i make this without the onion. it is a very tasty and hearty meal--very good to pack in your lunchbox! use lots of avacado yumm.

 Cheesy I also added cucumbers and mint leaves! These were out of this world. Recipes like this makes me feel so healthy and happy and warm inside because they're so easy to make. Smiley Will definitely make again. Thank you so much!!!

Delicious!!  I added cucumbers and cilantro...used lemon juice and did not add oil.  Fast, easy, and nutritious!

This was a super yummy recipe. I had some left over carrots and chopped them up to put in there. My cilantro was bad and didn't add it and it was still good. My husband put his in a wrap and really liked it.

How funny!  I just discovered this recipe on my own and wanted to put this up!!  This is so fast and delicious.  I recommend adding a dash of cayenne pepper as well.
