Cafe Liqueur Decadent Dessert

Ingredients (use vegan versions):

Sabrosa - coffee liqueur (Licor de cafe - it's vegan)
    Better Pecan vegan ice cream
    Soymilk
Chamborde (raspberry liqueur, super sweet, not too much needed)
    crushed pecans/walnuts
    sprig of mint

Directions:

In tall glasses, fill one fourth the way with licor de cafe, and fill half to three fourths of the way with cold soymilk (depends on how strong you want the alcohol taste).

Add a generous scoop of better pecan vegan (don't remember if it's soy delicious or the other brand... comes in a brownish carton I think) ice cream to the glass.

Top with Chamborde and crushed nuts and garnish with a sprig of mint.

Serve with a long spoon... it's super decadent and I invented it when I had a friend come over around Christmas time and we had left over coffee liqueur after a vegan brunch...

Preparation time: 10 minutes

chambord isn't vegan because it has honey in it.

Hallo... I had no idea that Chamborde had honey in it, thanks for sharing that info... it still tastes good without it, or you could add some raspberry syrup (I made a virgin version with espresso, soymilk, vegan ice-cream, raspberry syrup, mint and pecans).
