Spinach, "Feta", Rice and Lentil Phyllo Pie

Ingredients (use vegan versions):

    1 large white onion
    1 1/2 - 2 packages of frozen spinach, thawed
    about 1 cup cooked basmati rice (or any rice)
    about 1/2 to 2/3 cups of canned lentils, rinsed
    good pinch of fresh dill
    Feta cheese substitute (try seasoned firm tofu, crumbled)
    about 8 phyllo sheets
    olive oil
    salt & pepper

Directions:

Preheat oven to 400 degrees.

In a pan, fry onions in olive oil, for about 5 minutes, then add defrosted spinach.  You can squeeze out as much excess water as necessary.

Add cooked basmati rice and lentils. Fry for a few more minutes and stir in the dill, as much as you like.

Toss in some "feta cheese" and take off the heat. Add salt and pepper.

In a medium oven proof dish (like Corning Ware, preferably oval or square), spread a little olive oil to prevent sticking.

Layer about 8 phyllo sheets, and add the spinach/ beans onions/ rice/ cheese mixture.

Gather the top, scrunching it together. Brush a little more olive oil as well.

Place in the oven, for about 30 minutes, until golden and flakey at the top.

Enjoy.

Serves: 4-6

Preparation time: 40 minutes

This time I added mushrooms and used black rice instead.

i made this for christmas and it went over quite well. For the feta I used half a block of garlic and onion tofu crumbled and then also added red wine vinegar, oregano and basil to try and add some feta flavor. I really kicked up the flavor with the lemon, salt and feta spices and it turned out quite well.
