Un-Cheeseburger Macaroni

Ingredients (use vegan versions):

    (about) 2 cups Pasta (Use whatever kind you like, I use whole wheat Penne)
    1/2 cup Dragonfly's Bulk Dry UnCheese Mix
    3/4 soy milk
    1 Tablespoon of Ketchup
    1 small red onion diced (use any kind of onion you like)
    1 small tomato diced
    1/2 tablespoon mustard
    1 vegan Boca burger cooked and crumbled
    garnish with paprika and parsley

Directions:

I try to cook this all in one pot.  Here's how I do it:

Cook pasta, drain, and set aside.

Add soy-milk and dry Uncheese mix to empty pan, whisk and cook over medium low heat until thickened.

Add cooked, crumbled (or diced..  whatever) Boca burger to uncheese mixture. Add drained pasta to mixture, toss.

Squirt in ketchup, stir.

Squirt in mustard, stir.

Add diced tomato. Toss again. (At this point I take some out to serve to my two year old who will not eat the onions.)

Then I add the onions, toss.

Garnish with paprika and parsley.

NOTES:  The amounts are completely changeable.  The amounts above make enough for me and my two year old son for lunch.

It's so easy and you really can't mess it up regardless of what order you put everything in.

Add whatever you like on a "burger"...  diced avocado, mushrooms, etc.

*We make our uncheese mixture with almonds, only because raw cashews aren't as easy to get.

Serves: 2

Preparation time: 10 minutes

i love that you use dragonflys uncheese mix!!! i've used it in so many different ways.

oh, and this recipe looks like major comfort food

Iv never heard of this dragon chesse thingy...that picture looks so good, you just have no idea how I am drooling here....ummm. I think that it looks good enough to try...very, very soon.

mmm! this was great and so easy! i made a few modificatiosn though. i used follow your heart's cheddar cheese and gluten free rice penne! yuM!

I got the idea for my dish from this recipe...but did something quite different. I used a mac and cheeze sauce recipe from a blog, then mixed it with some leftover brown rice, steamed broccoli and cauliflower, and made some vegan bacon crumbles for the top. Mmmmm!

I don't know where you live.  Here in the northeastern USA, all the regular grocery  stores carry Boca products in their frozen food sections.  They also have Lightlife & Yves veggie crumbles in their healthy cooler sections.  These are pre-crumbled burgers which would also work well.
