Super CarrotsIngredients (use vegan versions): 5-6 carrots
1/2 cup veggie stock
juice of 1/2 lemon
2-3 garlic cloves
1 teaspoon dried basil
1/2 teaspoon garlic powder
sea salt
cracked black pepper
Directions:(All the aforementioned ingredient measurements are estimates...you decide what tastes best.)
Peel and cut carrots into smallish sticks, then start simmering them in the veggie broth.
Squeeze the lemon over the carrots and give them a toss.
Coarsely chop parsley, mince garlic, and add it all to the mix.
Get out your spices and add them, then toss everything again.
Keep everything simmering for a minute or two, then cover the pot and let everything steam together for another few minutes.
Enjoy eating the carrots and picking the parsley out of your teeth.
