Shepard's Pie - 1Ingredients (use vegan versions): 3 cups of water
3 cups peeled, cubed potatoes
4 peeled garlic cloves
salt to taste
1/2 cup soy milk

3 tablespoon olive oil, divided-2 and 1
1 medium onion chopped
1 cup thinly sliced carrots
1 cup thinly sliced parsnips
1 teaspoon dried thyme leaves
6 ounces seitan
1cup potato stock
2 tablespoon soy sauce

cornstarch[/url] dissolved in 2 tablespoons
water
1/2 fresh or frozen green peas
salt and pepper to taste

Directions:Prepare mashed potatoes: combine first 4 ingredients and bring to a boil. Reduce heat and simmer for about 15min until potatoes are tender. Drain and reserve 1 cup of stock. Mash potatoes with soy milk and set aside.
Preheat oven to 375. Heat 1 tablespoon of olive oil and add onions and saute for 5 minutes.
Add garlic, carrots, parsnips and thyme saute for 5 minutes. Add seitan potato stock, soy sauce and cornstarch mixture. Simmer and stir constantly for 2 minutes until sauce thickens.
Add the pea, salt, and pepper, then transfer to a lightly oiled 1 1/2 quart baking dish.
Spread mashed potatoes on top, drizzle olive oil and sprinkle with paprika Bake for about 20 minutes until top is golden.
I got this recipe from a friend and unfortunately after I moved, there isn't seitan available where I am now. So I've been using Yves Veggie Ground Round, but tempeh and chopped veggie burgers would work too. Be creative depending on the veggies you have on hand!!
