Shepard's Pie - 1

Ingredients (use vegan versions):

    3 cups of water
    3 cups peeled, cubed potatoes
    4 peeled garlic cloves
    salt to taste
    1/2 cup soy milk
    ----
    3 tablespoon olive oil, divided-2 and 1
    1 medium onion chopped
    1 cup thinly sliced carrots
    1 cup thinly sliced parsnips
    1 teaspoon dried thyme leaves
    6 ounces seitan
    1cup potato stock
    2 tablespoon soy sauce
    ----
    1 tablespoon 807]cornstarch[/url] dissolved in 2 tablespoons
    water
    1/2 fresh or frozen green peas
    salt and pepper to taste
    paprika

Directions:

Prepare mashed potatoes:  combine first 4 ingredients and bring to a boil. Reduce heat and simmer for about 15min until potatoes are tender. Drain and reserve 1 cup of stock. Mash potatoes with soy milk and set aside.

Preheat oven to 375.  Heat 1 tablespoon of olive oil and add onions and saute for 5 minutes.

Add garlic, carrots, parsnips and thyme saute for 5 minutes.  Add seitan potato stock, soy sauce and cornstarch mixture. Simmer and stir constantly for 2 minutes until sauce thickens.

Add the pea, salt, and pepper, then transfer to a lightly oiled 1  1/2 quart baking dish.

Spread mashed potatoes on top, drizzle olive oil and sprinkle with paprika Bake for about 20 minutes until top is golden.

I got this recipe from a friend and unfortunately after I moved, there isn't seitan available where I am now.  So I've been using Yves Veggie Ground Round, but tempeh and chopped veggie burgers would work too. Be creative depending on the veggies you have on hand!!

this was great! i added cooked peas and mushrooms and used TVP instead of seitan. i also did not add parsnips and carrots since i didn't have any. it probably would have tasted a lot better if i didn't burn it!!! BTW, my omni family loved it.

Why not keep the skins on the potato? Also, if you don't want to use soymilk to make your mash, you can use olive oil or any oil for that matter, more fattening, but doesn't add that odd soy milk taste to your mashed taters and browns the top crispy Cheesy.
