Roasted Artichoke

Ingredients (use vegan versions):

    1/2 tablespoon olive oil or vegan margarine
    1 tablespoon balsamic vinegar
    1 teaspoon brown sugar
    1 small minced garlic clove
    pinch salt
    pinch basil
    1 artichoke, pre-cooked

Directions:

Place cooked artichoke in the middle of a large square of aluminum foil.

Top with all other ingredients, then seal foil, enclosing the artichoke in a pouch.

Roast in the oven at 500 degrees or over hot coals for 6-8 minutes, turning pouch over halfway through cooking time.

Serves: 1

The way joy of cooking says to cook an artichoke, is that you cut off the stem and tips, put it in a bowl stem-side down, pour about a 1/4 cup of water in, take a second bowl and invert it and put it on top to cover the artichoke. Then microwave for 7 minutes, be sure to use hot pads when removing the bowl, and be careful the steam when you remove the upside-down bowl on top.
