Soymilk Oatmeal Ingredients (use vegan versions): 1/2 cup regular oatmeal (rolled oats, not the "quick cook")
1 cup soy milk (I use regular, but flavored might be nice)
pinch of salt
any sweeteners you like
spices (cinnamon, allspice, whatever)
Directions:Put oats and soymilk in a small pan along with salt. Bring to boil and then reduce heat and simmer until the soymilk is absorbed. You can then add spices, sugar, fruit, whatever you like. Turn off heat and let sit a couple minutes until it sets up a bit.
I made this looking to use up some soymilk I have and find that using the soymilk instead of water gives the oatmeal a nice, sweet taste without having to add a ton of sugar. I made mine with about 1/4 teaspoon cinnamon and a bit of brown sugar and it is by far the best oatmeal I've made to date.
