Chickpea & Sweet Potato Soup

Ingredients (use vegan versions):

    All measurements approximate/adjustable
    5 sweet potatoes
    5 potatoes
    2 leeks OR 1 brown onion
    ~100ml coconut cream (more for creamier taste)
    2- 3 cups chickpeas (soaked & cooked)
    1 1/2cups veggie stock
    optional: finely chopped celery
    optional: coriander, fresh chopped
    optional: pepper & salt

Directions:

Chop sweet potatoes and potatoes.  Microwave well.

Finely chop onion/leek (white part only) and fry in oil in soup pot until clear.

Mash potatoes and chickpeas together well.

Add mash, coconut cream, and veggie stock to saucepan and mix together.  Add more stock/water if needed.

Can eat this as soon as it is heated.  If you cook it for a while (45-60 min) it will become less lumpy. (or you could blend it).

Reasonably kid-friendly.

Stir in optional ingredients to taste.

Serves: 5

this is exactly what i was looking for!  the only things i did differently were to boil all of the potatoes in veggie broth and water instead of microwaving as well as blending a good portion of the soup after cooking it to add a little bit of a creamy texture to the broth.

Is coconut milk the same is coconut cream and how much is 100ml?
