Gluten/Wheat Free Holiday Sugar Cookies

Ingredients (use vegan versions):

    2/3 cup Sucanat
    1 cup vegan margarine
    1/2 cup applesauce or medium banana
    1 teaspoon vanilla
    2 1/2 cups rice flour blend (look below)
    1/2 teaspoon xanthium gum or guar gum
    1/2 teaspoon salt
    rice flour blend:
    6 cups rice flour
    2 cups potato starch
    1 cup tapioca flour

Directions:

Mix together all of the dry ingredients; then add the wet ingredients. Mix all together.

Lay out on floured countertop and roll to desired thickness (1/8-1/4 inch is best). Using cookie cutters (I used Halloween) cut as many cookies as you want and place onto a floured or lightly oiled pan.

Set the oven at 350 degrees and bake the cookies for eight minutes.

Take out at end, cool for five minutes and start icing if you wish*!~

Icing:
 powdered vegan sugar
 water
 fruit/food coloring


Great for kids or parties*!~

Preparation time: 20 min

Hi BreyettEyes! Like the look of this recipe.  I noticed your rice flour mix and wondered what else you might use the blend for? Is it a general purpose flour? Thanks, Kikilola - PS:  How many cookies does it make?

it makes about 20 or 30 cookies all depending on te cookie cut out sze, i made about 12 large and sosos many little cookies. This flour can be used for most anything ranging pancakes, cakes, cookies, etc...i made it up for a friend with celiac and she loved them...enjoy*~!~

My cousin, who has celiac disease (and is also allergic to milk and eggs), too, absolutely loved these cookies, and thinks they taste just like "real" cookies. She thought they were store bought.

Where do you find xanthum or guar gum? Will the recipe work without it, or is there an alternative ingredient that is easier to find?

i found it at my local organic/natural market....i was just doing research and foudn that it was mostly for binding together....but i'll se if i can find a substitute for you!!

These were great! I got numerous compliments (and any empty cookie plate) after serving these at an impromptu Halloween/Samhain party. I did adjust the recipe slightly. I don't have any friends with a gluten/wheat intolerance, so I used half white and half whole wheat pastry flour and no xanthium gum/guar gum. I'll be making these again for Solstice, Yule and Christmas! Smiley

I have been looking for a wheat-free recipe all the ones I have tryed never worked. But came across this one and had to modify it a bit with more flour about a cup more. If I didnt add the extra flour there was no way I could roll out the dough it was still so moist. But after  I cooked it for 15 mins (because it wasnt cooked in Cool it had a crunchy outside but gluey inside that wasnt cooked. even my kids wouldnt eat them. Any body else have these problems?
