Garlic Mashed PotatoesIngredients (use vegan versions): 12-14 med. size red skin potatoes (slice in halfs)
1 whole bulk of garlic
1 cup soy milk
1 stick soy margarine (cut into cubes) ( I used willow run soy bean margarine)
2 teaspoon salt
1 teaspoon crushed black pepper
1 teaspoon olive oil (for garlic)
1/4 teaspoon salt (for garlic)
Directions:Boil a large pot of water. Wash potatoes and half them.
Turn the oven on to 400 degrees. Take the whole bulk of garlic and cut off the tip. (about 1cm from the top) Place the garlic on top of a cookie sheet and drizzle olive oil and salt.
Place potatoes in boiling water. Place the cookie sheet with the garlic on top in oven. Cooking time for both = 30/40 minutes.
Tip. Take a small knife and poke into potato and if it slides off with out any force or shake, the potatoes are ready.
Take the garlic out of the oven. (Set it aside to rest). Drain the potatoes.
Tips. Pour the potatoes out onto a colander to fully drain out all the water. Place the potatoes back into the pot and turn the heat back up to med-high until you no longer hear any sounds. (sounds=excess water burning off) about 3-5minutes.
Squeeze the garlic out of its cloves (skin) (it should slide/come right out). Place the garlics into the pot with the potatoes and start mashing. Mash to your liking (silky smooth, with little lumps, or with bit size chunks)
Add salt, black pepper, margarine, soy milk. Fold into potatoes until equally incorporated.
Scope out onto a serving dish. Serve and Enjoy!
