White Wedding Cake

Ingredients (use vegan versions):

    3/4 pound soaked almonds
    equal amount of soaked dates, pitted
    shredded coconut
    Icing:
    3/4 pound macadamia nuts
    juice of 1 lemon
    agave to taste
    1 teaspoon vanilla
    raspberry juice for color
    thick shredded coconut
    raspberries for decoration

Directions:

Process almonds and dates in food processor.

Add shredded coconut by hand until the mixture thickens and is able to be formed into cakes.

Form 2 12" rounds and dehydrate for a few hours to set.

Meanwhile, process macadamia nuts, lemon, agave and vanilla in food processor until icing like.  Add berry juice to desired color.

Remove cakes from dehydrator, ice the top of one, put the second on top of the first, ice the entire cake!!

This cake stands up beautifully, like a real white cake!  Mmmm,boy!

Serves: 10-12

Preparation time: 24 hours

This recipe sounds so interesting and good, but I don't have a dehydrator.  Is there a way to achieve the same texture without using one?

I've made this cake with and without the dehydrator.  Try putting it in the fridge overnight to set it, this works well.  All the dehydrator does in that short amount of time is help it to keep it's form.  If you make a single layer cake you don't need it at all.
