Pinto & Sweet Potato Side Dish

Ingredients (use vegan versions):

    1 cup pinto beans
    1 large sweet potato
    spring onions
    red pepper
    garlic
    salt
    olive oil
    1 can diced tomatoes
    cayenne pepper

Directions:

Put about 2 tablespoons olive oil in a pan.  Heat.

Halve sweet potato, slice, and add to pan.

Add chopped spring onions.

After five minutes add 1/4 cup water.

Let simmer until sweet potatoes are tender.

Add pinto beans. (I use dried beans so I soften them beforehand-- canned beans would work well too)

Add the chopped red pepper.

Then garlic, olive oil and cayenne pepper to taste.

Finally add the can of tomato.

Let simmer for 5 minutes and serve.

(Adding collards or Kale is also tasty!  Just make sure they are chopped fine enough that they don't overpower!)

Serves: 3-4

Preparation time: 30 minutes

I'd soaked some pinto beans on a whim, so I made this  pretty straightforward dish last night.

Pros:As you can tell by the nice and easy recipe, there's not a lot of pizazz, but it's hard to screw up.

Cons: Also, I thought the flavor could use a little punch, so I stirred in a tablespoon of garam masala with the cayenne pepper.

Alterations:I was afraid the sweet potato wouldn't cook fast enough, so I microwaved it beforehand - wrong. There's plenty of time in the heat for them - otherwise you'll end up with mush like me.

All in all, it's a good "pantry" recipe 'cause it probably uses things you have in the pantry anyway.
