Chickpea "Egg Salad" Sandwiches

Ingredients (use vegan versions):

    2 cans chickpeas, drained
    vegan mayo (Vegenaise recommended)
    sweet relish or chopped dill pickles
    chopped green onion
    mustard (stadium mustard is good)
    salt and pepper to taste
    whole grain toast
    sliced tomato
    lettuce

Directions:

Drain the chickpeas and mash well or process in food processor.

Add the rest of the ingredients to your taste as if you are making egg salad.

Serve on whole grain toast with sliced tomato and lettuce.

Awesome!

(especially if you have a soy allergy or are sick of tofu.)

Serves: 4

i just made this and it was really really good. I used my own vegan mayo I make from scratch and added some organic spanish onions to the sandwich. Very different from the normal tofu "eggless" salad I normally make. I actually might add some tofu to it next time and blend both my recipes.  Smiley

Very good!  I used regular onion diced small rather than green onion, and I also added a splash of lemon juice and garlic salt instead of regular salt.  Spread on wholegrain bread and topped with tomato slices.  Yummy, yummy, yummy....definitely a new favourite!  I think I'm becoming addicted to chickpeas, quite a feat for somebody who used to hate them!

Hey...this is a big winner....

Fast...good...and healthy.....That's the big three for me.

Adjust wet ingredients to ease back on the mayo and it still works well....

The suggestion to add some lemon juice adds a bit Mediterranean authenticity to the dish...and it really works well....

good recipe! instead of relish I chopped up a few horseradish pickles and dumped in some of the horseradish pickle juice for the extra dang. bravo

This is a great, all purpose chickpea recipe.  I did switch the scallions for minced, Maui onion.  I added the scallions as a garnish.  I used Dijon (my fave) mustard and added a pinch of tumeric for color.

This was great! I added yellow and dijon mustard, dill relish, nutritional yeast, salt/pepper, celery seed and chopped celery. Served it with brocco sprouts, tomato and onion slices. I made it according to the recipe, with two cans of beans and it made a TON. I have made five sandwiches so far and it's about half gone. This would be good in a pita pocket too....... Yum!

i never liked mayonaise but i bought the fake stuff and tried this recipe anyway..

 Thumbs Up this recipe kicks butt!!! I love it!!!!! I use organic relish instead of dill pickles and i ran out of vegenaise so i bought nasoya and in this its amazing...with the spicy brow mustard!! yum
