Garlic & Herb Bread

Ingredients (use vegan versions):

    whole head of garlic
    oil
    vegan margarine
    a few sprigs of fresh herbs (chives, basil, oregano, thyme, parsley, etc.)
    baguettes or crusty bread rolls

Directions:

Cut the top off the garlic, drizzle with oil, and wrap it up thoroughly in aluminum foil. Bake at 180 degrees centigrade for 25 minutes.

Unwrap the garlic from its foil and squeeze the flesh into a bowl - be careful not to burn yourself. Leave it to cool for a few minutes.

Meanwhile, put sliced baguette or halves rolls in to grill golden-brown on both sides.

Add an equal amount of butter to the garlic and mash thoroughly with a fork until they form a paste. Finely chop the herbs and stir them in.

Remove the bread from the oven and spread liberally with garlic mixture.  Serve immediately.

Believe me - the extra time it takes to make this garlic bread is definitely worth it!

Makes: 4 servings, Preparation time: 10 minutes, Cooking time: 25 minutes

"flesh" is a term in Botany meaning the soft, pulpy portion of a fruit, vegetable, etc., as distinguished from the core, skin, shell, etc.

Choice of terminology is greatly affected by geography (ie. New Zealand).

180˚ Centigrade = 356˚ Fahrenheit

This recipes looks awesome, I never thought about roasting the garlic when mixing it with oil to spread on bread, I imagine it really brings out the flavor!  My husband won't eat pasta unless there is also garlic bread. Thanks Heliamphora for posting!

This is one of the best kinds of garlic bread i have ever made. the only thing i did different was instead of making a mash with the roasted garlic i kept it a little hard and chopped it up really fine then melted the butter on top of it , then dipped my  grilled baguette slices into it on both sides and spread the hunks of garlic on top of the pieces.  thanks for the recipe.  Smitten

Hehe, I don't like the word 'flesh' either, even though it can be botanical like you say. I just don't know another word for it, in this context. Roll Eyes

Roasting the garlic makes it mellow and kinda sweet. Smitten

Wow, talking about this makes me wanna make this again... alas, I have all the ingredients except the bread! Sad

I'm gonna go ahead and give myself five stars for this recipe. I made some again and I love love love it. It's so easy to make up a big batch of roasted garlic margarine and keep it in the fridge. Then grill or toast baguettes, buns or plain old slices of bread and spread 'em while they're hot. Grin hotforyou
