Cajun  Stuffed  Peppers

Ingredients (use vegan versions):

    4 large green bell peppers, par boiled and seeded
    1 pound Soyrizo, broken into bits and browned
    2 cups cooked brown rice
    1/2 cup onions, chopped, and browned
    1/2 cup celery, chopped and softened in microwave for 2 minutes
    1/2 cup day old whole wheat bread crumbs
    sea salt and cracked pepper to taste
    1/2 teaspoon Cajun seasoning ( Tony Chachere's)
    1 large can crushed tomatoes ( MUIR )

Directions:

Set seeded  peppers  aside.

Stuffing: mix  all  other ingredients together.

*Fill the  4  par boiled  green peppers  with  stuffing  mix.  Spoon  crushed  tomatoes on  each  top.

Set filled  peppers in  oiled baking  pan  with  1  inch  water.

Cover with aluminum  foil and bake  for  30  minutes  in preheated  350 Fahrenheit  oven.

Serves: 4

Preparation time: 30 minutes

Cannot  wait  to  try  this;  I've  been  waiting  for  a  great  vegetarian  stuffed  pepper  recipe ,  New  Orleans'  style  !  Sounds  awesome !

these turned out really good. i added a full teaspoon of cajun seasoning and some garlic powder.

This recipe was AWESOME! My boyfriend who hates tomatoes, hates onions, hates peppers, and is a meat eater, LOVED it... he said he was super surprised and loved EVERYTHING about it! :-) I used diced fire roasted tomatoes in green chiles because that was all I had and it turned out really well. I also added a little chili powder, some cumin, garlic, and I doubled the cajun seasoning! REALLY AWESOME recipe though! Thanks!
