Easy Pleasin' Oat Bars

Ingredients (use vegan versions):

    2 cups ground oats (see note)
    1 cup quick oats
    1⁄4 teaspoon sea salt
    1⁄4 teaspoon cinnamon
    1⁄4 cup pure maple syrup
    1⁄3 cup barley malt or brown rice syrup (see note)
    1⁄4 cup vanilla or plain soymilk or other non-dairy milk
    1 1⁄2 - 2 tablespoon canola oil

Directions:

These are wonderful snack bars that are a little crunchy, a little chewy, and not too sweet. They’re a cinch to make, and also freeze well. For some different flavors and textures, try stirring in 1⁄4 cup of dried fruits and/or toasted nuts, such as dried cranberries and toasted pecans, raisins and toasted almonds, dried apricots and toasted walnuts, or some non-dairy chocolate chips or carob chips.

Preheat oven to 350°F (176°C). In a large bowl, combine all the dry ingredients. Add the wet ingredients into the dry mixture, stirring until well combined. Transfer the mixture to a lightly oiled 8"x12" baking dish and press it down until evenly distributed.  Using a sharp knife, cut to mark out the bars before you bake them to make it easier to fully cut and remove the bars once baked. (I usually mark out 12 rectangular bars, but you can make whatever size you like.) Bake for 19-21 minutes, then remove and let cool in pan. Once cool, use a sharp knife to fully cut the bars, then remove with a spatula. Tip: The bars are softer if they are not overbaked. For even softer bars you can use a smaller pan to yield thicker bars.

Note: This recipe calls for “ground oats.” Ground oats can be made from quick oats, which are available in grocery stores. Use your food processor and process the quick oats for a minute or two. The consistency should be similar to coarse flour.

Yes! These were simple and good. I might add some sugar next time though, because I have a sweet tooth. I made bars out of mine and used peanut butter frosting to kick them up a notch...very, very good!

I just made these oat bars and they are amazing!  Perfect as is.  I added some dried cranberries and toasted blanched almond and just used rolled oats from the bulk bin at my local organic grocer.

Ok, I altered this a little because I have a hard time leaving a recipe alone. I replaced one of the cups of oats with kamut flakes, used agave instead of brown rice syrup, omitted the maple syrup but added a few drops of stevia and increades my soymilk to about 1/3 cup. I also added a splash of maple extract also and used grapeseed oil instead of canola. I was really happy with the texture and flavour but found them slightly dry- probably because I changed the recipe so much! All in all, a great recipe. I will definitely make these a lot and will try adding nuts, seeds, carob chips, nut butters and other yummies. Mmmm, dessicated coconut with cocunut extract would be delish... Tongue

This is such a great little recipe!  I couldn't believe how truly easy these oat bars were to make, but I was lucky to have brown rice syrup on hand as that is something I don't cook with often.  Like a previous reviewer, I used bulk rolled oats.  I used olive oil instead of canola and added a handful of raisins and flaxseeds.  I will probably experiment with peanut butter and cocoa powder next time.  Very versatile and yummy.  Thanks!

My co-worker gave me a recipy such as this one, except you add in a lot of penut butter and some dark chocolate, and don't put any oils or syrups in it. They had a weird name like "fuck bars" or "sex bars"   because they are pretty amazing.

This is now one of my favorite snacks! I like honey or agave instead of brown rice syrup. I also prefer doubling or tripling the recipe for bigger thicker meal replacing bars. I have added almonds and raisins and it is so tasty. Thanks for sharing this recipe with us.

Do these get crunchy hard or no?  my husb loves granola bars but only crunchy ones.  I wonder if I cut them and then baked a second time, like biscotti, if that would work?

These were soft for me. To the point where they would probably mold if you had them around too long.

Baking them twice is a good idea. Or add more oil.
