Grandma's Stuffed Dates

Ingredients (use vegan versions):

    dates
    shredded coconut
    raw walnuts/walnut halves

Directions:

This is a special recipe that my great grandma used to make for me.

Pit the dates. This is most easily done by simply slicing one side and pulling the pit out.

Put a half of a walnut inside the date where the pit used to be.  Roll the stuffed date in the coconut.

Enjoy!

Preparation time: 1 minute tops

i stick raw almonds in my dates and leave out the coconut. very good! this is very flexible depending on what you like to eat with your dates

Um... looking at this recipe again, I guess I just followed what baypuppy said. Dates stuffed with almonds, sans coconut. Five of these suckers and I was very tired. Dates make me sleepy.

Thanks for the good ideas. about dates, nuts and coconut!

Before today, I had not liked dates and now I know it is because because I've never had a genuine high quality date. Tasted my very first Medjool date today (from a Middle East shop) and it was flavorful, chewy and delicious. I'm fairly new to raw food and this discovery opens up new possibilities of sweet eats. This recipe may be one that my grand daughter may even like.
