Cauliflower with Lemon-Garlic Crumbs

Ingredients (use vegan versions):

    1 head cauliflower
    1 cup bread crumbs
    2-3 tablespoons vegan margarine or olive oil
    zest of 1/2 lemon, grated
    juice of 1/2 lemon
    2-3 garlic cloves, minced finely
    2-3 tablespoons parsley, minced finely
    pepper and salt to taste

Directions:

Steam cauliflower whole or broken into chunks or wedges until a little more crisp-tender than you like to serve it.  I micro waved it whole.  Drain off accumulated liquid, and salt and pepper to taste.

Mix bread crumbs with fat of choice, lemon zest and juice, garlic cloves, and parsley.  Pile crumbs onto cauliflower and bake, broil, or even microwave until the crumbs are lightly crisped and streuselly good.

This is passing fancy for something so quick and humble.  It's rich-- yes, there's a lot of oil in the crumbs-- and the lemon and garlic really bring out the sweetness in the cauliflower.

Serves: 4 big servings (or more servings if side dish size!)

I loved this one.  Of course I love cauliflower, garlic, lemon and parsley....so it was a good combo for me.  I made homemade breadcrumbs out of some poor old wheat buns I had been neglecting.  This was a good treatment for them!

I think I ended up using about twice as much breading than it called for.  It was super good though.  After I took the pic, I chopped it all up on the plate and mixed it together.  Delish!

My husband made this, with a whole lemon instead of a half, and he made the breadcrumbs out of "seeduction" bread from Whole Foods.  I usually dislike cauliflower, but I ate this and it was great.  I was extremely hungry at the time, but I suspect this recipe is also very good.

Thanks for this recipe, it was really delicious! Both me and my mom loved the breadcrumb mixture. The only issue we had with it was that the bread crumbs didn't really stick to the cauliflower that well, so next time i might try tossing the cauliflower in a bit of oil before adding the crumbs, so maybe it'll stay together better.. but, it was delicious either way!

This was a good cauliflower variation! I used meyer lemons and just crumbled up our usual wheat bread for the crumbs..so they were fabulous. My cauliflower head was pretty small...so I ended up adding too much garlic (3 big cloves) for the amount of cauliflower; it was a bit over powering. I also used a little bit of thyme instead of parsley. This is a great side dish!  Smirk

 Thumbs Up Great Recipe.  I forgot the parsley oops.  My husband loved it. I used New Orleans Style Bread Crumbs which is ground up french bread. This recipe is a keeper.  It is quick easy and taste GREAT!

This was great... my boyfriend and I ate an entire large head of cauliflower last night, thanks to this recipe. I was out of breadcrumbs, so I used the same volume of crushed salted-top soda crackers, and it turned out really well.

I made this for easter and it was yummy!  Although, I was stupid and did a few things wrong like having my dummy sister do the lemon and put way too much...and I mashed the cauliflower because I'm just an idiot...all in all, it was good, I just won't be stupid next time  Roll Eyes
