Easy, Basic Waffles in the Morning

Ingredients (use vegan versions):

    1 cup flour
    2 teaspoons baking powder
    1/2 teaspoon cinnamon
    1/4 teaspoon salt
    1 cup soy milk
    1/2 cup applesauce
    Optional: mix in some berries, chocolate chips, whatever you like!

Directions:

My gf and I wanted some waffles but most of the vegan recipes we found were not "basic" enough and had all sorts of ingredients we didn't have on hand. So we modified a recipe and here it is. You can add different spices, replace part of the applesauce with oil, etc. it is pretty flexible.

Mix the dry ingredients in a bowl with any "mix-ins" (berries, chips, goodness). Mix the wet ingredients in a different bowl. Combine and mix until just mixed up.

Preheat waffle iron and spray with some nonstick oil (or wipe down with some oil). That's important cause they stuck like mad to the iron when we made them!

Cook according to the waffle makers instructions, which usually means putting about 1/4 cup batter on the iron, closing, and waiting for a light to go out.

Serves: 2-3

Preparation time: 5 + waffle iron time

This is a very good starter for a waffle recipe.  I ended up adding 2 Tbsp of cornmeal & 1 Tbsp of oil to keep it from sticking (everything sticks to my "non-stick" waffle iron).  It turned out wonderfully.

However, I think you might be a bit off on the milk.  I had to splash in a bunch of extra "milk".  I'm sure some of that had to do with the cornmeal, but the batter was really dry.

Thanks for the recipe though!  Good job!

I just made these and they were pretty good for being so easy- They only took a second to make. I used half spelt flour and half white, added chocolate chips, and added about a tablespoon of oil. They didn't stick to my nonstick waffle maker. Thanks for the quick and easy recipe!

This is my favorite waffle recipe. I make way more waffles than any human being really ought to make. i use some ground flax seed+water instead of applesauce, and put in some oil so they don't stick to the pan. i also half the baking powder, and they seem to do great. thanks for the great recipe!

Great recipe Baypuppy! I love the simplicity of your recipes (ie, carrot cake) Are there more?
They were hard to cut for some reason-like a little rubbery, but once in the mouth they tasted great and had a good texture. So quick and simple, which is just what I was looking for tonight.

Wow, this was good!  I did not need the applesauce...added 1 tbsp. of oil, as suggested, used vanilla soy, and sprayed my waffle iron, too.  Came out great!   Cheesy

Freecycle! Put a wanted note out for wanting a waffle iron. Google Freecycle + YourTown and you will possibly find a group. Edmonton's is on yahoo groups. I got free 5lb excercise weights from it Smiley I also used it to give away a fish tank I had collecting dust.

This really is a wonderful recipe. My husband, who is very much *not* vegan describes them as "how a perfect waffle in a perfect world should taste."

My personal changes included adding a tablespoon of canola oil into the mixture as well as coating the waffle iron with oil, and they never stick. I also toss in half a teaspoon of vanilla and sometimes ground nutmeg. These guys come out beautifully every time.

I have one question however: they typically deflate a little after they've been removed from the waffle iron, and I was wondering if cooling them on a metal rack might help. Has any one else had this problem? Or maybe I'm just manhandling them a bit when I take them out of the iron.

blueberries are an excellent addition to this recipe, but be sure to have your iron thoroughly oiled up...they stick like crazy!

I used ground flax instead of the applesauce and I added maybe 1 1/2 teaspoons vanilla extract.
I also added finely chopped strawberries and pecans.

I'll deffinately make these again.

These are hands down the best vegan waffles I have made!  Thanks for the quick & dirty recipe... they were ready in no time! It's super easy to double the recipe to feed two hungry kids & a pregnant cook Smiley !  I used 2 tbls of vegetable oil (for the doubled recipe), Silk Vanilla, & a dash or two of Vanilla... absolutely fantastic! The kids liked them so much & had to hide the last two so my husband could have a taste!  Grin  I'm definitely making these again!

Not the best waffle recipe ever. I was quite happy when the waffles didn't stick to the waffle iron, but the waffles became soggy when they cooled, and the moisture made them stick to the plate. The waffles tasted good; they weren't anything special. Thanks for the recipe. Smiley

I made this recipe this morning exactly as it calls for and they were a huge hit.  I made them for a retirement breakfast party for a colleague who is lactose intolerant and everyone loved them.  One co-coworker said that she liked them better than regular waffles.  (P.S.  I didn't get any myself as they were all gone by the time I got to the buffet table but I'll trust my co-workers and make some for myself on a weekend morning!).

Hey these came out pretty good.  My only changes were that I used a banana instead of applesauce, and I added 1 tablespoon of a sweetner.  One time sugar and another time honey.  Thanks for sharing.
