Mashed Cauliflower

Ingredients (use vegan versions):

    1 head cauliflower
    2 tablespoons margarine
    salt and pepper to taste
    soy cheese (optional)

Directions:

Cut off cauliflower stem and leaves and coarsely chop floret’s. Immerse the chopped cauliflower into salted boiling water and cook until soft, up to 20 minutes. This time will vary depending on how small the pieces are, so check them every few minutes.

Drain and transfer into bowl. Add margarine and soy cheese, if desired, and mash with fork until the floret’s are broken down and mashed.  In addition to salt and pepper you may add any other seasonings that will compliment your tastes and the meal these accompany.

Ideally this will be a substitute for mashed potatoes. Enjoy!

Serves: 2-4

Preparation time: around 30 minutes

I made this last night but with just a few modifications.  Rather than boiling, I steamed one chopped head of cauliflower, one chopped russet potato (skin and all), and half a bunch of kale, destemmed and chopped. I then mashed all of this with a little Earth Balance margarine and pepper and served it with a batch of mushroom gravy.  Super Yummy!

A word of caution, though: this is my second time making mashed cauliflower, and the first time ended in total disaster because I added a little soy milk before mashing. Don't do this or you will get a pile of watery ick! The cauliflower already retains so much moisture that, unlike with potatoes, you don't need to add any extra liquid.

I've been making this for quite some time. I use frozen cauliflower, vegan cream cheese, garlic powder, and tons of freshly ground pepper! I just throw the whole thing into a cereal bowl, nuke it for about 6 minutes, and mash it with a fork. Such an improvement on regular mashed potatoes!   Kiss

This was my first time to try this..and my husband and I thought it was good. I thought the texture would be different (maybe I was thinking about mashed potatoes), but it was still good. I steamed the cauliflower, and just added EB, salt and ,pepper (Patrick put soy sauce on his). It's a good recipe to have in my vegetable repertoire.  Smiley

I keep seeing mashed cauliflower recipes, but never been brave enough to try one...might have to give this a shot!

ive been wanting to try mashed cauliflower forever and i finally did...and it was great!  i highly reccomend this recipe, i followed it exactly and it came out great

i even impressed my sister who hates veggies!

I use a food processor for a really smooth, whipped texture. I add 1/4 tsp garlic powder and 1/2 tsp salt (but I steam the cualiflower, not boil in salted water). My hubby and my dad are huge potato addicts and they absolutely love this. If only cauliflower were as cheap as potatoes!

Absolutely fantastic!! I will be making this very often, beautiful flavor and really lite. You can even cut down on the eb if you wanted. Thanks for a great recipe

Amazing!  I can't believe I haven't made this before now.  I mean, my mom made it for me once back when we were doing some low carb thing and I didn't care for it - I think it was a texture thing....but I must say, I'm a little obsessed with this right now - I'll probably be making it constantly.  I steamed the cauliflower for about 10 minutes and mashed it with EB, a little FYH Mozzarella, salt, pepper, and garlic powder.  Next time I'll try whipping it in the food processor so its a little creamier - mine was a little chunky, but I was just mashing with a fork.

This was really good. It was a little soggy because we didn't drain it well enough and it would have been better with soy cheese which we didn't have. C said it was perfect: "in between grits and mashed potatoes" Tongue
We added some paprika to the mix too.
