Spice Cake with Not Cream Cheese Frosting

Ingredients (use vegan versions):

    1 1/2 cups flour, organic
    1 cup brown sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/2 teaspoon allspice
    1/2 teaspoon ground cloves
    1 teaspoon ginger
    1/2 teaspoon salt
    1 teaspoon vanilla
    5 tablespoons oil
    1 tablespoon vinegar
    1 cup warm water
    vegan cream cheese *frosting

Directions:

Preheat oven to 350 degrees F. Line an 8 inch square pan with parchment or Release foil or grease.

Mix all dry ingredients in a large mixing bowl. Make 2 wells, add vanilla and oil to one and vinegar to another. Pour the warm water over all, stir only until combined.  Do not use an electric mixer, just beat with a spoon.

Pour into pan and bake for 30 minutes or until done. Let cool completely, then prepare frosting using ingredients below.

*Frosting
 5 tablespoons margarine, softened 8 ounces vegan cream cheese, 1 teaspoon vanilla extract 2 cups powdered sugar

In a mixing bowl, beat together margarine and vegan cream cheese. Beat in vanilla. Stir in sugar. Beat until fluffy. Spread over cake.

Note:  I use a brand of vegan cream cheese spread called "Better Than Cream Cheese" by Tofutti.  It's good stuff!

Serves: 8

Preparation time: 10 minutes prep, 30 minutes bake

I made this as cupcakes for myself, 2 other vegans, and 2 omnivores, and they were awesome. The frosting is really really sweet though... it was also pretty thin, but I kind of liked having it real goopy. I also left out the vinegar because I didn't have any, and nothing bad happened. Oh and everyone thought they were amazing, so yep, awesome.

oh man, i made this recipe into cupcakes, my fiance ate them QUICKLY!!!  I used less butter than the recipe called for...still came out yummy!!!

I'm really bad at baking, so could u guys tell me if it's alright to sustitute this recipe with wholewheat flour and applesace instead of oil? Will it be fluffy?

I thought the batter was too runny but it turned out great. It needed an extra 15 minutes in the oven but the texture and flavor were wonderful. I did half wheat flour and half white. This is the easiest recipe I have made all week. I recommend it for sure!

you could probably use whole wheat pastry flour and it would be fine. also, i would put in at least 3 Tb of oil, the other two could be subed w/ applesauce.

Absolutely scrumptious!    Thumbs Up   I made this for my daughter's third birthday (my 9 year old decorated it to look like Spongebob Squarepants - oh I wish I had a picture for you!) and it was devoured!  Everyone asked for the recipe and I pointed them here.

I didn't alter the recipe at all, and even though I doubled it to make a larger cake (9x13) the cooking time didn't change.

I brought this to a potluck lunch at work and a couple of omnivores asked me for the recipe - it was really good.

The only change I made to the cake was to substitute nutmeg for the allspice (it's a combination of cinnamon, cloves, and nutmeg, so I figured that made sense).  I didn't use the cream cheese frosting, but made this vanilla glaze:  http://vegweb.com/index.php?topic=6817.0.

I've always made chocolate wacky cake, but somehow I never thought of making it other flavors - what a great idea!

I made this as a cake for our restaurant and it was fabulous!  I replaced all but 1 tablespoon of oil with applesauce.  It was amazing! Thumbs Up

I made this cake for a Thanksgiving gathering.  The only thing I did differently was add some shredded Fuji apples to the batter.  It was amazing!!!  I loved it and so did everyone else.  It was the only dessert that was completely gone on the whole table.  Thanks for the recipe.  Thumbs Up

This cake came out great!  I really love the taste of it.  I reminds me of a spice cake one of my aunts used to bake.  The only things I did different from the recipe was use white sugar and 1 1/2 Tbs of molasses as I didn't have any brown sugar left and I added some raisens and dried cranberries to the batter.  It took longer than 30 minutes to cook but that could be the fault of my over....not the greatest.  I don't think I'll make the frosting again.  I am not a big fan of frosting anyway and I think the cake is good enough without it.

This cake came out so light and fluffy, I was really impressed!
At the end of the 30 minutes baking time I skewered it and it was still super gooey, so I gave it five more minutes and it was perfect.
I didn't make the icing, I'm not really a fan of icing, and besides I don't think vegan cream cheese exists in New Zealand.
Omni husband came home from work raving about the cake, and I even got my mum to try a piece and like it, though possibly only because I didn't tell her it was vegan hehehe  [she doesn't believe in cooking without eggs/butter]
Definitely going to make this again, maybe as cupcakes as others have :)
