Delish Twice Baked Potato

Ingredients (use vegan versions):

    1 baked potato
    1/4 cup veggie crumbles (Morningstar Farms has a good frozen version)
    1/8-1/4 cup chopped onions
    1-2 teaspoons soy margarine
    2 tablespoons hummus
    2 tablespoons salsa (I use more because I love salsa. I pile it on)
    salt and pepper to taste
    2 teaspoons nutritional yeast

Directions:

Turn oven to broil.

Take pre-baked potato and scrap out the insides with a fork, being careful to keep the potato skins whole, so they look like a bowl and reserve. Place the insides in a bowl, mash with fork and set aside.

Cook onions in pan on medium heat with a little bit of oil or cooking spray. When onions turn transparent add the veggie crumbles. Cook this all until the crumbles are browned and a bit crunchy.

Add this mixture, soy spread, salt and pepper to the mashed potato until well combined. Scoop this mixture into the potato skins, sprinkle the nutritional yeast on top. Cook in oven for about 5-10 minutes or until browned, and warm throughout.

When serving, top with hummus and salsa. I think that the hummus has a sour creamish taste to it and is currently one of my favorite dinners! You can experiment with other veggie as well, I may try broccoli and garlic next. Let me know what you think, and enjoy!

Preparation time: 15 minutes or so

I shall try this one very soon, i do one with vegan mayo instead of hummus, a little sweetcorn, vegan cheese, finely chopped onion and salt and pepper, really tasty.

This was really yummy!  Instead of the morning star meat, I sauteed broccoli and one garlic clove with the onion.  In a bowl I mixed together the potato insides with vegan butter, vegan sourcream, onion mixture, salt, and pepper.  I sprinkled nutritional yeast on top.  I finished every bite!

I am going to try this this weekend or next week. What a perfect dish. I bet this is awesome with some lentil loaf and a salad.

YUM!  I give this recipe 5 million stars!  I also made it with Kellystern's alterations.  Instead of sprinkling nutritional yeast on top, I sprinkled on some of Dragonfly's Uncheese mix (dry) on top. WOW!  Next time, I think I'll mix the uncheese stuff right in with the rest of it. Amazing.  Thank you!!!!
