Country Fried Seitan Steak and Gravy

Ingredients (use vegan versions):

    1 recipe for seitan steaks
    oil for frying
    breading:
    1 cup bread crumbs
    1 teaspoon basil
    1 teaspoon oregano
    dash of salt & pepper
    1/2 cup soy milk
    flour (enough to coat all the steaks)
    gravy:
    1/2 medium onion, sliced
    3 tablespoons flour
    1-1/2 cups soy milk
    1 tablespoon vegan margarine

Directions:

Sides of mashed potatoes, corn, and green beans all go wonderfully with this dish.

1. Prepare the seitan steaks according to the recipe you use (there are several great recipes on this site to choose from).

2. While steaks are boiling, prepare the breading.  In a bowl, combine the bread crumbs, basil, and oregano.  Add salt and pepper if you wish.  Then, pour soymilk into a second bowl, and place flour into a third bowl.  I like to have these set up right next to each other, to make breading simple.

3. Once the steaks have absorbed all of the broth, remove them from the pan.  One at a time, coat each steak with flour, then dip the steak in the soymilk, then coat it with the breadcrumb mixture.  Repeat until all steaks are breaded.

4. Pan fry the breaded steaks in vegetable oil over medium heat until brown and crispy.  Place the fried steaks onto a plate covered with paper towels to absorb the excess oil.  Reserve the frying oil when you are finished to make the gravy.

5. After frying all the steaks, add onion to the pan, and fry in remaining oil over medium heat until soft (you may want to add a little more oil if there is not enough left).  Add 3 tablespoons flour and stir until mixed.  Slowly add the 1-1/2 cups soymilk and 1 tablespoon vegan margarine to the pan, and stir well.  Cook and stir until gravy bubbles and thickens.  Add salt and pepper to taste, and serve over steaks.

Serves: 2 to 4

Preparation time: about 90 minutes

This was delicious!  I used the recipe for seitan from Hillbilly Housewife http://www.hillbillyhousewife.com/chickenseitan.htm.

The only modification I made to this recipe was using whole wheat flour.  Also, to make the gravy, I used the soy milk and flour leftover from breading the seitan cutlets.

Mmm.  I'll have to try this soon-- "country fried" is such a synonym for "comfort food."  Wink 

Great link to the Hillbilly Housewife site!  I rediscovered a lot of my grandma's (pleasantly frugal because I'm feeling po'!) recipes there.  What a treat!

My wife and I have been looking for new seitan recipes and this was a great one! I've always wanted some great vegan breading mixtures (without eggs, being vegan and all  Wink )and now I know how to make great breading that sticks! Thanks! We've been vegan for 6 years and have been making our own seitan for about 2 years now. We think this is a great recipe and highly recommend this one. If there was anything I would change, it would be to make the gravy a little saucier. So far I just have used a little less flour and added a bit more soy milk. Does anyone know of any other recipes for a white gravy? Let me know! Grin

I have been making this at least once a week since I found the recipe. I absolutely love it! I just tried a variation where i substituted organic cornmeal for the bread crumbs....it was great! I highly recommend it!  Cheesy

Little crystal thanks for that website, I made the seitan from there and it was amazing, hy husband thought it tasted waybetter than the kind we used to buy from the store.  Thanks!

This is AMAZING!!! Shocked This sounded like such a perfect comfort food, I even decided to make seitan from scratch after getting home from work late! (Well, okay... I only let the seitan boil for half the time called for, but I couldn't wait anymore!) I served this alongside green beans & garlic mashed potatoes, and it was perfect! And I'm sure it would be even better if would have let it cook the full amount... Wink

Also, the gravy is the best vegan gravy I have tried... I actually never liked "regular" gravy in my omni days because it grossed me out, but this was great! Very traditional-tasting, in a non-greasy, non-animal fat way! Roll Eyes

One last thing: I used a mixture of unbleached flour, flax seeds & Panko bread crumbs for the coating, and it gave it a nice crunch that browned up very nicely! Yay! I love this recipe! Thank you!

This was a very good recipe, the gravy and the breading were excellent. My only recommendation is, split the portions in half if you intend to eat this alone...

This was my first Seitan experience. I actually bought store bought Seitan (before realizing how easy it is to make).
However, I discovered just as I was going to cut it that my seitan was chunked, already cut in "blocks". I almost just forgot this recipe and made a "sheppard's pie" type dinner.
However, I NEVER fry anything and this sounded good! Plus, I figured if anything it would just add more flavor in each smaller bite.

THIS RECIPE rocks! I made it exactly as written and used whole wheat breadcrumbs.
I served this with a veggie mix (broccoli, caul., carrots) and "smashed" potatoes.

This was my first time making seitan although it came out great and my husband loved it. Its VERY filling and had good flavor but personally not for me just because its so heavy and in resemblance to meat. I also made the gravy it was good. Wink

This was absolutely amazing. I didn't hand make my seitan though I used store bought chicken style seitan. My bf love love loved it. I made garlic rosemary mashed potatoes with it and topped it with the yeast gravy http://vegweb.com/index.php?topic=6977.0. Delicious! I added salt to it while it was frying and I made my own bread crumbs from dry toast, celery salt, savory seasoning and vegan parmesan cheese I also added the savory seasoning to the seitan while it was frying.  Smitten

The chicken fried seitan part came out well but my gravy sucked.  Not because of the recipe but because I used soy creamer and didn't realize it was sweetened.  It was plain but had a lot of sugar.  Needless to say my first bit of gravy was my last because it tasted weird and grouse.  I recommend the fried seitan part but I can't tell you how the gravy is because I haven't really tried it yet.
