Italian BruschettaIngredients (use vegan versions): 5 vine tomatoes (must be ripe)
3 peeled garlic cloves
8-10 fresh basil leaves, shredded
3/4 good olive oil
salt to taste
baguette slices, toasted
Directions:Chop tomatoes, basil, and garlic.
Combine with olive oil and salt.
Refrigerate or let sit out for about 30 minutes.
Toast baguette slices and top with bruschetta.
Even better the next day!
