Chickpea Salad in Lettuce CupsIngredients (use vegan versions): 1 can chickpeas
1 small tomato, deseeded & finely chopped
1/2 red onion, finely chopped
1 tablespoon lemon juice
1/2 teaspoon cayenne pepper
1/2 curry powder (optional)
2 tablespoons finely chopped cilantro
10 - 12 large tender butter lettuce leaves
salt & black pepper to taste
Directions:Drain, rinse & pat dry the chickpeas.
Toss with the rest of the ingredients, except lettuce.
Wash and gently pat dry the lettuce leaves (use these leaves as cups).
Place about 1-2 tablespoons of the chickpea mixture into the lettuce cups, depending on the size of the leaves.
Fold up the cups and eat!
