Happy Banana Cookies

Ingredients (use vegan versions):

    2 very ripe mashed bananas
    1/2 cup molasses or cane syrup
    2 teaspoon vanilla
    2 cups oat flakes
    1 cup whole wheat flour
    2 teaspoon baking soda
    1 teaspoon ginger
    1 tablespoon cinnamon
    1/4 chopped walnuts or almonds(optional)

Directions:

Mix together and drop by spoonfuls onto baking sheet. Bake at 350F for 12-15 min. I made the recipe yesterday and it made about 2 dozen reasonably sized cookies.

They can get stale fast, so best to keep them in the freezer.

Preparation time: 1/2 hour

these are yummy. i added raisins and used pecans for the nuts. great flavor and texture and not too sweet.  Cheesy

I made a half-recipe of these cookies on Saturday morning. I never halve baking recipes, because my husband always gobbles everything up, but I've not baked with molasses before so I was a bit tentative.

And I'm pleased I was.  I actually think the taste is growing on me now, but I handed out a few of these to a few different people, with the disclaimer: this is not a sweet cookie, yet the bitter taste was still a sticking point.
I don't know, I'm not writing them off, but they're sure not for everyone!

I followed the amounts given in this recipe exactly, but because I wanted to make "Happy PEANUT BUTTER Banana Cookies", I replaced the 1/2 cup of molasses with chocolate peanut butter (from Peanut Butter and Co.), the 1/4 cup of nuts with chocolate chips, and the spices with cocoa powder.  The result was two dozen incredibly moist cookies.  Yum!
