Jalapeno Poppers

Ingredients (use vegan versions):

    12 jalapeno peppers
8 oz tub of soy cream cheese (I use Tofutti)
    1 cup soy milk (approximately)
1 cup all purpose flour (approximately)
1 box spicy shake and bake (check ingredients)
    oil for deep frying

Directions:

Cut the peppers in 1/2 length wise. cut off tops and toss the seeds.

Fill peppers with soy cream cheese.

Put milk, flour, and shake & bake in 3 separate bowls

Dip peppers into milk then into flour. Allow to dry 10 min.

Dip in milk again then roll in shake & bake. Allow to dry 10 min.

Repeat the last 2 steps 'till totally covered (usually 2-3 times).

Heat oil to roughly 370 degrees.

Deep-fry about 3 min.

Place on paper towel.

These are so good even my non veggie friends loved them, and all us wussies found that they weren't too spicy either. If you decide to use other flavors of Shake & Bake, check the labels because some are not vegan. I also don't recommend the extra crispy because it chunks up.

These are pretty good, in spite of the modifications I had to make.  First, I had no cream cheese, so I took some of the leftover cheese from one of the mac & cheese recipes on this site and used that because it's really thick.  Then, I couldn't find any vegan shake & bake (all the ingredient lists had folic acid on them, which from what I understand is usually animal derived {Animal Ingredients A to Z Second Edition}; rule #1 - if you're not sure, don't buy) so I ended up making my own mixture that I put on the poppers.  I did fry them in oil - I might try baking them next time for a healthier version.  And I am looking forward to trying them with cream cheese some time, too.  I'm so glad to find a recipe for these on this site, I was practically addicted to these pre-veg, so it's good to be able to enjoy them again.

 Cry
You should tell everyone to WEAR GLOVES when cutting and hallowing out the peppers!  It is not common knowledge that jalapenos contain an incredibly powerful capsaicin on the pod wall which will burn your skin for hours with no hard remedy.  Needless to say after hallowing out the peppers by hand I noticed a strong tingling sensation on my hands which grew increasingly hot.  This progressed so much throughout the night (despite soaking in many suggested remedies) that even ice cold water could not shake the feeling of my skin being sanded raw and blown with a torch.  I was up until 4 in the morning in agony, luckily I hadn't touched my eyes.  It spreads easily!
Be careful cutting these effers!  If you come in contact with it the best thing to do is soak in milk or yogurt for temporary relief and play the waiting game.  Youch!

Oh yes, PLEASE be sure to follow kalidog's advice.  I made this mistake the second time I made these, and then I rubbed my eye after handling the peppers.  I spent 30 minutes flushing my eye out and it still watered all night.  If I were a smarter man, I probably would have gone to see my doctor as soon as I'd done that to myself, but I didn't.  I haven't made that mistake since, and I've made these a lot since I first posted my review and mods.

And by the way, if you take the pepper halves and put them on a cookie sheet (or whatever is handy and won't burn   Wink ), then put them under the broiler - on low - for about 5 or so minutes, just until they start to shrivel up and maybe brown a little, the heat from them when you bite into them is greatly reduced.  Or at least it seems to be, to me.  And I have Acid Reflux Disease, so I need to be very careful about what I eat.  But keep and eye on that 5 minute time, ovens vary.

Oh my, these are SO good.  I haven't made them, my sister has, but since she hasn't left a review, I figured I would.  So yeah.  They're good.  Real good.

Do you think adding some nutritional yeast to the cream cheese would give it a more cheddar like taste?

I used plain Tofutti Cream Cheese and mixed in about 1 - 2 tablespoons of Baco's (fake bacon chips) because the non-veg poppers I used to eat used to have bits of bacon or meat in it. Awesome combination! I used plain bread crumbs and added onion & garlic powder for flavor. I breaded it about 3 times for that crisp crust. Love it.

I made these using the cheeze sauce from "Best Tofu Scramber Ever" (or I think that was the title, anyway), and it worked really well!  I also used Tamari instead of soy milk to wet the poppers before flouring and crumbing them, which also worked really well and added some nice flavor.

The only problem was that instead of deep frying I dunked the floured and bread-crumbed poppers in oil and then baked them, which worked great as well, except that the peppers didn't cook long enough to lose some of their heat, so they were SOOO HOT!!  I like hot, but this was like, much too hot!  Tears running down my face, sweating... the whole thing!

I baked the leftovers for an extra15 minutes and they were delicious, tho still very hot.  Next time i might roast the peppers before I stuff and cook them (as someone mentioned above), but I'll definitely make them again, it's a great recipe!

Mmm, I have some more left over for tonight Smiley

I made these for the second time tonight, and they were fantastic!

I broiled the seeded, halved peppers for about 10 minutes (as suggested above), and they were at just the right level of heat after the rest of the cooking.  I opted to use a coffee mug instead of a bowl for the liquid part of the battering (I used tamari instead of soy milk), which makes it easier to coat the poppers, in my opinion.  Afterwards I used a coffee mug again to dip the poppers in oil instead of deep frying them, and then baked them on a tray in my oven at around 400 for about 10 or 15 minutes.

They were perfect, I love this recipe!

Try adding dried apricots or papaya to the foe cheese mix!! With the fake bacon the poppers have a sweet, savory, and spicy flavor. Great recipe, thanks!
