Rainbow Teriyaki Stir Fry

Ingredients (use vegan versions):

    1/2 - 1 block extra-firm tofu, cubed
    1 small onion, minced
    2+ cloves garlic, minced
    1 carrot, bias-cut into coins
    1 cup broccoli florets
    1 red pepper, cut into medium chunks
    1 cup sliced mushrooms
    1/2 can pineapple tidbits, drained (reserve juice)
    Sauce:
    1/4 cup soy sauce
    1/4 cup pineapple juice
    1 tablespoon sliced fresh ginger, or 1 tablespoon ground ginger
    1 garlic clove, minced
    1 tablespoon brown sugar
    1 tablespoon 807]cornstarch[/url]

Directions:

Combine soy sauce, pineapple juice, ginger, 1 clove garlic, brown sugar, and cornstarch in a small bowl and set aside.

In a medium saucepan, bring 2 cups water to a boil.  Add 1 cup brown rice and reduce heat to minimum.  Simmer, covered, for 45 minutes.

Meanwhile, cut up veggies.  Sauté onions and garlic (I use at least two cloves) in olive or grapeseed oil until soft.  Add veggies in the order they appear (carrots, broccoli, pepper, mushrooms, pineapple).  Remove from wok, set aside, and fry tofu to your desired crispness.

Push tofu to the side of the wok, whisk up the sauce, and add it in.  Stir until thick and bubbly.  Add all the veggies back in, stir until heated through, and serve over brown rice.

Serves: 4-6

Preparation time: 45 minutes

im shocked this hasnt gotten more reviews! this came out great- - just like from a restaraunt. i added a touch of water to the sauce because it was a little strong and i wanted more of it. i used broccoli, carrots, pineapple, zucchini and black sesame seeds. the only thing i did different cooking was i cooked the tofu first cause it takes so long. then i put the rest of the veggies in with the sauce and put a lid on it, so they were pretty much steamed. i served it over brown rice, it came out delicious and not too heavy! will definitely make again <3

This recipe turned out pretty well.  I pretty much followed it to the letter only added a little more pineapple juice to it.  I liked it and will make it again.  I give it four stars.

This came out great.  I was low on veggies so I used leeks, baby corn, and sugar snap peas, and tempeh instead of tofu.  The sauce was perfect and really melded well with the tempeh.  I served it with brown rice, miso soup, and edamame.  The whole effect was impressive - Thank you for this recipe!

I was very impressed with this recipe. I found this specific recipe via Google.com's serach engine, and my girlfriend and I shopped to get the ingredients for this recipe. We followed the majority of the recipe, and this is one of the best dishes I have made with the help of an online recipe. I have enjoyed eating this dish so much that my girlfriend and I have made it three times in the last three weeks, and I am going to make it for my family tomorrow. Awesome recipe - highly recommended.

I just made this on Saturday. It was so easy, fast and tasty! I do a lot of different stir-fry's and this is on my top 5. I really liked the sauce ( I might make a bit more next time to coat the rice) and the pineapple addition. Very good!

I made this for a friend and I for lunch today - it was so yummy! I didn`t have tofu, mushrooms or  carrots, but i replaced them with peas and green pepper. Served it with edamame. And it was super easy. I love that i didn`t have to leave home to get some weird teryaki ingredient, i had everything on hand. Very Good.  Thumbs Up

This recipe is a keeper. We loved it! The only thing I changed was I added about 1/2 cup water and a little more cornstarch. We like it saucy!
